Spinach Bacon and Mushroom Crustless Quiche

An easy and tasty Whole30 and Keto friendly brunch item! This crustless quiche is packed with spinach, bacon, and mushrooms and is sure to be a crowd pleaser.

Ingredients

  • 8 eggs
  • 3 cups raw spinach
  • 8 strips sugar free bacon
  • 2 cups sliced mushrooms
  • ½ cup full fat coconut milk or almond milk, if using coconut milk, make sure to shake the can and/or mix well before using because it separates!
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp nutritional yeast, (optional but gives it a nice cheesy flavor!)

Instructions

  1. Preheat oven to 350°F (175°C) and spray a 9-inch round pie pan with your cooking oil of choice. Next, prepare the bacon. You can either bake it in the oven for about 12 minutes or until crispy, or cook it in a skillet. For the skillet method, cut the raw bacon into one-inch pieces and fry in a skillet until mostly cooked through and slightly crispy. At this point, add the sliced mushrooms to the skillet with the bacon pieces and sauté for 3-5 minutes until they begin to soften. Finally, add the raw spinach and sauté for an additional minute until it wilts. Remove from heat and set aside to cool slightly.
  2. In a separate large bowl, thoroughly beat the eggs with the coconut or almond milk, sea salt, black pepper, garlic powder, and nutritional yeast (if using). Whisk until all ingredients are well combined and frothy. Gently fold in the cooked bacon, mushrooms, and spinach mixture into the egg batter, ensuring the fillings are evenly distributed. Pour the entire mixture into the prepared pie dish. Bake for 40-50 minutes, or until the center of the quiche is set and a knife inserted comes out clean. The top should be golden brown. Let it cool slightly before slicing. Serve warm with your favorite hot sauce or a dairy-free ranch dressing, and enjoy!
