If you’re using raw bacon, chop it into 1-inch pieces and cook in a large saute pan over medium heat for a few minutes per side until crispy. Once cooked (or if using pre-cooked bacon), add the spinach and diced tomato to the pan and stir until the spinach is wilted. Set this mixture aside.
  2. In a large mixing bowl (a large measuring cup with a spout works wonderfully for easy and precise pouring), beat the 11 eggs thoroughly. Use a fork or whisk to ensure the egg whites are fully broken up and incorporated.
