  • 1.5 lbs chicken breasts, cut into 1–2 inch cubes
  • 1 lb peeled & deveined shrimp, tails removed
  • Jasmine rice, for serving

Marinade

  • ½ cup olive oil
  • Juice from 2 limes
  • Zest from 2 limes
  • ½ cup fresh cilantro, very finely chopped
  • 2 cloves minced garlic
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 2 tbsp coconut aminos
  • ¾ tsp salt
  • ½ tsp pepper

Mango Salsa

  • 1 cup diced mango
  • 1 avocado, diced (add just before serving if making ahead)
  • 1 small cucumber, diced
  • ½ red bell pepper, diced

Stovetop / Skillet

  • Heat a large nonstick skillet over medium-high. Cook chicken 3–4 minutes on the first side, flip and cook 2–3 more minutes until done. Remove and keep warm. Cook shrimp 1–2 minutes per side until cooked through.
  • Serve the chicken and shrimp over jasmine rice topped with mango avocado salsa.
