Spotlight Recipe: Whole30 Maryland Crab Soup – A Taste of the Chesapeake Bay, Cleaned Up!

Close-up of a hearty bowl of Whole30 Maryland Crab Soup, steaming and garnished.

While I may not be a native Marylander, having spent my formative years on the beautiful south shore of Massachusetts until age 12, Maryland has been my home for the better part of the last 22 years. During this time, I’ve developed a profound appreciation and love for its rich culinary traditions, especially those revolving around the iconic Maryland Blue Crab. There’s something truly special about indulging in a delicious crab cake or, even better, a steaming bowl of Maryland Crab Soup. While the ritual of picking whole crabs can be a fun annual event, I often find myself craving the ease and rich flavor of a well-made crab soup.

The traditional Maryland Crab Soup is a robust, tomato-based concoction, often featuring ingredients like peas, corn, and Worcestershire sauce, usually alongside a non-compliant beef broth. For those following a Whole30 program, these ingredients present a challenge: Worcestershire sauce typically contains gluten, peas and corn are legumes/grains (respectively) and are off-limits, and many commercial beef broths harbor hidden sugars, colorings, or additives. Determined to enjoy this beloved comfort food while adhering to Whole30 principles, I embarked on a mission to “clean up” the recipe. The result? An incredibly flavorful and satisfying soup that captures the essence of Maryland crab soup without any of the non-compliant ingredients. Trust me, whether you’re a Maryland native or a curious foodie from afar, this recipe is an absolute must-try for its vibrant flavors and wholesome goodness.

Choosing the Right Bone Broth for Whole30 Success

A crucial component of any compliant soup, especially this Maryland Crab Soup, is the quality of your bone broth. During my recipe testing, I opted for Bonafide Provisions beef bone broth, known for its clean ingredient list and rich flavor. However, you have many excellent compliant options available. The key is diligence: always read labels carefully to ensure there are no added sugars, artificial colorings, or other non-compliant additives. Finding compliant beef broth can sometimes be trickier than chicken broth on Whole30, as some brands include undesirable ingredients. Look for brands that are transparent about their sourcing and ingredients.

You can often find high-quality bone broth in the freezer section of many health-conscious grocery stores like MOM’s Organic Market and Whole Foods, as well as larger retailers such as Walmart and Wegmans. Check the store locator on your preferred brand’s website to find retailers near you. Other reputable Whole30-compliant bone broth brands include Bare Bones Broth, Osso Good Bone Broth, and Kettle & Fire Bone Broth. Investing in a good quality bone broth not only ensures compliance but also adds a depth of flavor and significant nutritional benefits, including collagen, amino acids, and essential minerals, which are fantastic for gut health and overall well-being.

A gluten-free, grain-free, and legume-free rendition of the classic Maryland soup! Perfectly Whole30 friendly.

Ingredients

  • 1
    lb
    fresh lump crab meat
  • 4
    cups
    compliant beef broth,
I used Bonafide Provisions. Make sure to check labels for sugar, colorings, additives, etc.
  • ½
    onion,
    diced
  • 2
    russet potatoes,
peeled and diced into ½ inch cubes
  • 1
    cup
    frozen cut green beans
  • 1
    cup
    diced carrots
  • 1
    15 oz can
    diced tomatoes
  • 2
    tbsp
    tomato paste
  • 1
    tbsp
    coconut aminos
  • 1.5
    tbsp
    Primal Palate New Bae seasoning,
+ more if you like heat! You can also use Old Bay
  • 1
    tsp
    ground mustard,
this is a powder and can be found in the seasoning aisle!
  • 1
    tsp
    fresh ground black pepper

Instructions

  • Combine all ingredients (except crab meat) into a large stock pot. Stir thoroughly to combine all the flavors. Bring the mixture to a rolling boil over medium-high heat. Once boiling, reduce the heat to a gentle simmer. Carefully add the lump crab meat to the simmering soup. Cover the pot and allow it to simmer on medium-low heat for 1 to 1.5 hours, allowing the flavors to meld beautifully and the vegetables to become tender. Serve hot and enjoy the rich, comforting flavors!

Instant Pot Instructions

  • Add all of the ingredients, excluding the crab meat, into the Instant Pot insert. Secure the lid and ensure the venting knob is set to “sealing.” Cook on manual high pressure for 12 minutes. Once the cooking cycle is complete, carefully perform a manual pressure release. Remove the lid and switch the Instant Pot to “sauté” mode. Stir in the lump crab meat and continue to cook for an additional 5-7 minutes, stirring occasionally, until the crab is thoroughly warmed through. Serve immediately and savor your quick and delicious Whole30 Maryland Crab Soup!
