My Star Contribution: The Deconstructed Elote Salad

Now, let’s dive back into the star of my segment: the Mexican Street Corn and Tomato Salad. I’ve always been a huge fan of classic Mexican Street Corn, or “Elote.” There’s something undeniably captivating about the combination of smoky grilled corn slathered with creamy mayonnaise, a squeeze of tangy lime, a sprinkle of chili powder, and salty cotija cheese. It’s an explosion of flavor and texture that truly embodies Mexican street food culture. However, as delightful as it is, eating corn on the cob can be notoriously messy, especially at a casual gathering. You end up with spices and mayo on your face, fingers, and everywhere else!

My solution? Why not take all those incredible flavors and deconstruct them into a convenient, shareable salad? By removing the corn kernels from the cob and mixing them with the other ingredients, we create a dish that’s not only easier to eat but also incredibly versatile. Making it Dairy-Free (or Not!)

One of the most frequent questions I receive revolves around dietary restrictions, particularly dairy. I typically avoid cow’s milk dairy because it tends to cause inflammation for me. But here’s an interesting fact: authentic feta cheese is traditionally made from sheep’s milk, or a combination of goat’s and sheep’s milk. These alternatives often present a less inflammatory profile compared to cow’s milk.

Goat’s milk, in particular, offers several digestive advantages. Its fat globules are naturally smaller, making it easier for our digestive systems to break down. It also boasts high levels of healthy fats and contains significantly less lactose than cow’s milk. These characteristics make sheep and goat milk products, including feta, much better tolerated by individuals who typically struggle with digesting cow’s milk. So, if you’re like me and occasionally indulge in cheese, feta is often my preferred choice for its flavor and its gentler impact on my system. Always listen to your body, but it’s good to know there are options!

  • 6 ears fresh corn on the cob, or about 2 cups frozen fire-roasted corn, cooked according to package directions
  • 1 tomato, diced
  • 1 tbsp avocado oil
  • ½ red onion, diced
  • 1 jalapeño, seeded and diced
  • 2 limes, juiced
  • ¼ cup fresh chopped cilantro
  • ½ cup mayonnaise (I prefer Sir Kensington’s Avocado Oil Mayo for its rich flavor, but any brand will work)
  • ½ tsp sea salt
  • ½ tsp paprika
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ cup feta cheese, for topping (omit if dairy-free!)

Instructions

  1. Remove the corn kernels from the cobs using a sharp knife and set aside in a bowl.
  2. Heat the avocado oil in a large skillet (a cast-iron skillet is highly recommended for best charring results!) over medium-high heat.
  3. Once the skillet is hot, add the corn kernels and use a spatula to spread them out evenly in a single layer. Allow them to cook for about 5 minutes without stirring. This crucial step helps develop that beautiful char and smoky flavor.
  4. Once the bottom of the corn starts to brown and crisp up, stir the corn and continue to cook for an additional 5-7 minutes, or until the kernels are tender and lightly charred to your liking.
  5. Transfer the cooked corn to a large mixing bowl.
  6. Add the diced tomato, red onion, jalapeño, fresh lime juice, chopped cilantro, mayonnaise, sea salt, paprika, chili powder, and cumin to the bowl with the corn.
  7. Stir all the ingredients together thoroughly until everything is well combined and coated with the dressing.
  8. Top with crumbled feta cheese before serving (if you tolerate dairy; otherwise, enjoy it dairy-free!).
