Today, we’re diving into one of my absolute favorite fall recipes: this utterly delightful Harvest Stuffed Acorn Squash. It’s a dish that embodies everything wonderful about the season – hearty, sweet, savory, and incredibly satisfying. Not only is it easy to prepare, but it also makes for fantastic leftovers, and the flavorful filling can even double as an amazing egg-free breakfast hash (or topped with an egg for an extra treat!).

  • Building Flavor: When making your own sausage, don’t be shy with the spices! They are what create that rich, complex flavor. If using store-bought sausage, taste it first and adjust additional seasonings as needed.
  • Deglazing the Pan: After cooking the sausage and vegetables, adding apple cider to the hot pan and scraping up the “fond” (the browned bits at the bottom) is crucial. This step, known as deglazing, adds incredible depth of flavor to your stuffing. Make sure to use 100% pure apple cider or apple juice for the best results and to keep it Whole30 compliant.
  • Making Room for Stuffing: Once the squash is roasted and slightly cooled, you might find you need to scoop out a little bit of the squash flesh to create more room for the generous stuffing. Don’t discard this! Simply chop it up and mix it into your filling for an extra layer of flavor and texture.

Harvest Stuffed Acorn Squash

All the tastes of fall come through in this sweet and savory Whole30 dish!

Ingredients

Sausage (if making your own)

  • 1 tbsp olive oil, or avocado oil
  • 1 lb ground pork
  • ½ tsp sea salt
  • ½ tsp pepper
  • 1 tsp dried sage
  • ¼ tsp ground cloves
  • 1 tsp fennel seeds
  • 1 tsp paprika
  • ½ tsp red pepper flakes (more or less to taste)
  • 1 tsp garlic powder
  • ½ tsp onion powder

Remaining Ingredients

  • 1 tbsp olive oil
  • 2 medium sized acorn squash, halved and pointy end chopped off, so it stands easily without tipping over
  • 1 tsp cinnamon
  • 2 cups kale, stems removed and chopped
  • 1 apple, peeled, cored, and chopped
  • ½ onion, chopped
  • 1 tsp rosemary
  • 1 tsp thyme
  • ¼ tsp cayenne pepper
  • 2 tbsp fresh apple cider or apple juice, check ingredients to ensure it’s 100% juice!

Instructions

  • Preheat oven to 400°F (200°C). Place squash halves on a foil-lined baking sheet (cut side up) and spray with a bit of olive oil. Add a dash of salt, pepper, and cinnamon to each half. Bake for 45 minutes or until tender.
  • Meanwhile, begin making the sausage. Heat 1 tbsp of the olive oil over medium-high heat in a large skillet. Add the ground pork, sea salt, pepper, dried sage, ground cloves, fennel seeds, paprika, red pepper flakes, garlic powder, and onion powder. Sauté for 5-7 minutes, breaking up the pork, until it is cooked through and browned. Remove from the pan using a slotted spoon and set aside, leaving any rendered fat in the pan.
  • In the same pan where you cooked the sausage, add the remaining tbsp of olive oil (if needed). Add the chopped apples, onion, kale, rosemary, thyme, and cayenne pepper. Add more salt and pepper to taste. Sauté until the vegetables soften and the kale wilts, about 5-7 minutes. Return the cooked pork sausage to the pan. Add the fresh apple cider and stir, using your spoon to scrape up any browned bits from the bottom of the pan to incorporate all the flavors. Simmer for 1-2 minutes until the liquid is slightly reduced.
  • When the acorn squash is done baking, carefully remove it from the oven and let it cool for about 5 minutes. If necessary, scoop a little bit of the tender squash flesh out of each half to make more room for the generous stuffing – don’t discard it, just add it to your stuffing mixture! Evenly spoon the delicious harvest stuffing into each roasted acorn squash half, dividing the mixture among all four. Serve warm and enjoy your hearty, flavorful meal!
