Instructions

  • Preheat oven to 375°F (190°C). Use 1 tbsp of olive oil to lightly rub into each cup of a silicone muffin pan (this works better than spray for preventing sticking). Heat the remaining 1 tbsp of olive oil in a large skillet over medium heat. Add the sausage pieces and cook for 2-3 minutes until lightly browned. Stir in the sweet potato and cook for an additional 2-3 minutes. Add the kale and cook for 1-2 more minutes until it just begins to wilt. Remove from heat and let the mixture cool for a few minutes.
  • Meanwhile, in a large Pyrex measuring cup (for easy pouring) or a mixing bowl, beat the 10 eggs together with the ½ tsp of sea salt and 1 tbsp hot sauce.
  • Scoop an even amount of the sausage, sweet potato, and kale mixture into each prepared muffin cup. Pour a bit of the egg mixture into each cup, filling them to slightly below the top edge.
  • Bake for 18-20 minutes, or until the eggs are fully set and no longer runny. Carefully pop them out of the silicone muffin pan and enjoy! These are delicious served with compliant ranch dressing or ketchup. You can store leftover egg cups in the fridge for up to 4 days.
