Discover a healthier, Whole30-compliant version of the beloved creamy comfort food: Chicken Broccoli Alfredo. This delicious recipe substitutes traditional pasta with nutrient-rich spaghetti squash and features a luxurious dairy-free cashew Alfredo sauce. It’s an easy-to-make, satisfying meal that your entire family will absolutely adore!

The Ultimate Whole30 Chicken Broccoli Alfredo: A Healthy & Flavorful Twist
Chicken Broccoli Alfredo has always held a special place in my heart. Growing up, it was a go-to order at restaurants, a comforting classic that rarely disappointed. However, the traditional version, while undeniably delicious, often comes loaded with heavy cream, butter, and parmesan cheese. While those ingredients contribute to its signature richness, they can sometimes leave you feeling overly full or sluggish, and certainly aren’t suitable for a Whole30 lifestyle or those with dairy sensitivities.
That’s where this revolutionary recipe comes in! We’ve reimagined Chicken Broccoli Alfredo, transforming it into a meal that is not only incredibly satisfying but also remarkably wholesome and Whole30 compliant. The star of our healthier twist is a decadent, dairy-free Alfredo sauce, crafted from real, nourishing ingredients like creamy cashews, full-fat coconut milk, savory chicken broth, and a hint of nutritional yeast for that essential cheesy depth. The best part? You’d never guess it’s dairy-free – the flavor and texture are remarkably close to the traditional version, offering all the indulgence without any of the guilt.

Why a Healthier Alfredo? Embracing Dairy-Free & Whole30 Principles
The journey to a healthier lifestyle doesn’t mean sacrificing your favorite comfort foods. It means finding smart, delicious substitutions that align with your dietary goals. Traditional Alfredo sauce, while a culinary marvel, is often high in saturated fats and dairy, which can be problematic for many. For those following a Whole30 program, dairy is completely off-limits, making classic Alfredo a no-go.
Our dairy-free Alfredo sauce offers a fantastic solution. By harnessing the natural creaminess of cashews, combined with the rich texture of full-fat coconut milk, we create a sauce that mimics the luxurious mouthfeel of its dairy-laden counterpart. Nutritional yeast steps in to provide that distinctive umami, savory “cheesy” flavor without a drop of actual cheese. This innovative approach allows you to enjoy the comforting essence of Alfredo while adhering to strict dietary guidelines, whether you’re on Whole30, managing a dairy allergy, or simply looking for lighter, more nutrient-dense meal options.
The Genius of Sheet Pan Meals: Convenience Meets Culinary Excellence
One of the aspects I love most about this Whole30 Chicken Broccoli Alfredo is its ingenious use of the sheet pan method. It’s a game-changer for several compelling reasons:
- Effortless Cleanup: Imagine a delicious meal with minimal post-dinner scrubbing. With sheet pan cooking, you simply line your baking sheets with parchment paper, and once dinner is done, you can often just fold up the paper and toss it. That’s it! This convenience alone makes sheet pan meals a weeknight hero for busy individuals and families.
- Perfectly Cooked Protein & Veggies Every Time: I don’t know about you, but cooking chicken on the stovetop can sometimes be a challenge. It’s easy to overcook it, leading to a dry, rubbery texture. The sheet pan method, however, is wonderfully forgiving and consistently delivers perfectly tender, juicy chicken. Similarly, vegetables roast beautifully, developing a slight caramelization and a delightful crisp-tender texture that’s hard to achieve with other cooking methods.
- Streamlined Process: By staggering the addition of ingredients to the oven based on their cooking times, we ensure everything finishes perfectly together. The spaghetti squash gets a head start, followed by the chicken, and finally the broccoli. This methodical approach makes the cooking process incredibly efficient and stress-free.
While your chicken and vegetables are roasting to perfection, you can whip up the creamy dairy-free Alfredo sauce. This can be done concurrently or even a day in advance, saving precious time. If you prepare it ahead, a quick whisk and a splash of chicken broth to adjust consistency will bring it back to its luscious state when reheated gently on the stove. This thoughtful timing ensures a cohesive and enjoyable cooking experience from start to finish.

Essential Ingredients for Your Whole30 Chicken Broccoli Alfredo
Crafting this healthy Alfredo dish requires a selection of fresh, wholesome ingredients that are easily accessible. Here’s what you’ll need to gather:
- Spaghetti Squash: Opt for a large one, or two smaller ones if a single large squash isn’t available. This amazing vegetable naturally transforms into pasta-like strands when cooked, providing a low-carb, gluten-free, and Whole30-approved base for your “pasta” dish.
- Chicken Breasts: Approximately 1.5 to 2 lbs. Look for high-quality, organic, or pasture-raised chicken if possible. Cutting them into strips ensures even and quick cooking on the sheet pan.
- Broccoli Florets: About 4 cups. Fresh broccoli adds vibrant color, essential nutrients, and a delightful texture contrast to the creamy sauce.
- Raw Unsalted Cashews: The secret to our ultra-creamy, dairy-free Alfredo sauce. These nuts blend into a smooth, rich base without the need for dairy.
- Full-Fat Coconut Milk: Make sure it’s full-fat for maximum creaminess and a rich mouthfeel. Stir it well before measuring to ensure a consistent texture.
- Nutritional Yeast: This magical ingredient provides a cheesy, umami flavor without any dairy, making it indispensable for our Whole30 Alfredo.
- Lemon Juice: A squeeze of fresh lemon juice adds brightness and a subtle tang that elevates the entire sauce.
- Chicken Broth: Used to adjust the sauce’s consistency and add savory depth. Ensure it’s Whole30 compliant if strictly following the program.
- Garlic: Fresh garlic cloves are crucial for infusing the Alfredo sauce with its classic aromatic flavor.
- Olive Oil, Sea Salt, Black Pepper, Garlic Powder: For seasoning the chicken and broccoli before roasting.
While cashews are fundamental to achieving the unique creamy texture of this dairy-free sauce, I understand that nut allergies are a concern for some. Unfortunately, I don’t currently have a nut-free alternative that delivers the same fantastic results, but I am actively exploring and testing options. Cashews truly have a singular texture that makes them ideal for mimicking dairy in creamy sauces.

Frequently Asked Questions & Expert Tips
How to Perfectly Roast Spaghetti Squash Without Wateriness?
Achieving perfectly roasted spaghetti squash that isn’t watery is simpler than you might think! My go-to method ensures consistently delicious results every time. First, carefully cut the spaghetti squash in half lengthwise. Scoop out all the seeds and fibrous bits from the center. Then, place the squash halves cut-side down directly onto a foil-lined baking sheet. Roast it in a preheated oven at 400°F (200°C) for approximately 35 minutes. By placing it cut-side down, the moisture stays trapped within the squash, steaming it gently while it roasts, resulting in tender, dry, and easily scoopable strands. No need for oil or salt during this initial roasting stage!
Is Soaking Cashews Necessary for a Smooth Sauce?
The necessity of soaking cashews largely depends on the power of your blender. If you are fortunate enough to own a high-powered blender, such as a Vitamix or similar professional-grade appliance, you can generally skip the soaking step. These blenders are designed to pulverize ingredients into an incredibly smooth consistency in a matter of seconds. However, if you’re working with a standard blender, soaking your cashews is highly recommended. To do so, place the raw cashews in a bowl and cover them with boiling water. Let them soak for at least 30 minutes (or even longer, up to a few hours, if you have the time). This process softens the cashews significantly, ensuring that even a less powerful blender can achieve that desired velvety, lump-free dairy-free Alfredo sauce.
Can I Prepare This Meal Ahead of Time?
Absolutely! This Whole30 Chicken Broccoli Alfredo is fantastic for meal prep. The dairy-free Alfredo sauce can be made up to one day in advance and stored in an airtight container in the refrigerator. When ready to use, gently reheat it on the stove over low heat, whisking well. You might need to add a splash more chicken broth to thin it out to your desired consistency as it tends to thicken when chilled. The roasted spaghetti squash, chicken, and broccoli can also be prepped and stored separately in the fridge for 3-4 days. To reheat, gently warm everything together, perhaps in a skillet or in the oven, and then combine with the reheated sauce.
Are There Any Variations or Add-ins I Can Try?
While this recipe is perfect as is, it’s also incredibly versatile! Feel free to experiment with additional Whole30-compliant vegetables like sautéed mushrooms, spinach, or asparagus. A sprinkle of fresh parsley or chives before serving can add a burst of fresh flavor and color. For a hint of spice, a pinch of red pepper flakes in the sauce can be a delightful addition. Always ensure any new ingredients align with your Whole30 guidelines.

Whole30 Chicken Broccoli Alfredo

Equipment
-
Blender
Ingredients
- 1 large spaghetti squash
- 1.5 – 2 lbs chicken breasts, cut into strips
- 4 cups broccoli florets
- 2 tbsp olive oil, divided
- 1 tsp garlic powder
- 1 tsp sea salt, divided
- ½ tsp black pepper, divided
Dairy Free Alfredo Sauce
- 1 cup raw unsalted cashews, (soaked for 30 minutes if you don’t have a high-powered blender)
- 2 cloves garlic
- ¾ cup chicken broth
- ½ cup full fat coconut milk, stirred before measuring
- 1 tbsp nutritional yeast
- 1 tbsp lemon juice
- 1 tsp sea salt
- ¼ tsp black pepper
Instructions
-
Preheat your oven to 400°F (200°C). Prepare the spaghetti squash by cutting it in half lengthwise and scooping out the seeds. Place the halves cut-side down on a foil-lined baking sheet. Transfer this sheet to the oven and set a timer for 10 minutes. This initial roasting period allows the squash to start cooking, as it requires the longest cooking time among our ingredients.
-
While the spaghetti squash begins to roast, prepare your chicken. In a bowl, toss the chicken strips with 1 tablespoon of olive oil, 1 teaspoon of garlic powder, ½ teaspoon of sea salt, and ¼ teaspoon of black pepper, ensuring the chicken is evenly coated. Arrange the seasoned chicken in a single layer on a separate parchment-lined baking sheet. Once your first timer goes off for the spaghetti squash, add the chicken sheet pan to the oven, ideally on a rack below the squash. Reset your timer for 25 minutes.
-
Next, prepare the broccoli. Toss the broccoli florets with the remaining 1 tablespoon of olive oil, ½ teaspoon of sea salt, and ¼ teaspoon of pepper. When there are 15 minutes of cooking time left on your chicken and squash, carefully add the seasoned broccoli florets to the sheet pan with the chicken. Use a spatula to gently toss the chicken and broccoli together on the pan to ensure even cooking and seasoning. Return the pan to the oven for the remaining 15 minutes, allowing everything to finish cooking simultaneously.
-
While the chicken and vegetables are roasting, prepare your dairy-free Alfredo sauce. Combine all the Alfredo sauce ingredients (raw unsalted cashews, garlic, chicken broth, full-fat coconut milk, nutritional yeast, lemon juice, sea salt, and black pepper) in a high-powered blender. Blend on high for at least 1 minute, or until the sauce is completely smooth and creamy. You can either leave the sauce in the blender to keep warm, or for a more consistent temperature, transfer it to a small saucepan and heat it gently over low heat, whisking occasionally. If the sauce becomes too thick while sitting or reheating, simply add a tablespoon or two of extra chicken broth until it reaches your desired creamy consistency.
-
Once all components are cooked, carefully remove the spaghetti squash from the oven. Using a fork, scrape out the tender spaghetti-like strands into individual bowls or a large serving dish. Top the spaghetti squash with generous portions of the roasted chicken and broccoli. Finish by drizzling a generous amount of the warm, creamy dairy-free Alfredo sauce over the entire dish. Serve immediately and enjoy this delightful, healthy, and satisfying Whole30 meal!
