Are you searching for an effortlessly elegant and incredibly flavorful meal that simplifies weeknight dinners or impresses guests without the fuss? Look no further than this exceptional Sheet Pan Pork Tenderloin with Butternut Squash and Grapes. As a passionate advocate for efficient, delicious cooking, I can confidently say that sheet pan meals are a game-changer, and this recipe stands out as a true culinary triumph. It draws inspiration from a delightful dish my mother-in-law prepared during a recent Christmas gathering, prompting me to put my unique spin on it. The result is a foolproof method for cooking pork tenderloin, ensuring a juicy, tender protein every time, even if you’ve been intimidated by it in the past.

What truly elevates this dish is the masterful interplay of flavors and textures. As the pork tenderloin roasts, its savory juices naturally infuse into the tender butternut squash, creating a depth of flavor that is simply irresistible. Then there’s the unexpected, yet utterly brilliant, addition of roasted grapes. You might be thinking, “Roasted grapes?!” – but trust me, this is a game-changing element you simply must experience. Roasting the grapes coaxes out their inherent sweetness, transforming them into succulent bursts of concentrated flavor that provide the perfect counterpoint to the savory pork and earthy squash. This combination delivers a harmonious balance of sweet and savory notes, making every bite a delightful surprise.

Pork tenderloin is an excellent choice for a quick and healthy meal. It’s an incredibly lean cut of meat, rich in protein, and cooks relatively fast, making it ideal for busy evenings. When selecting pork tenderloins, look for pieces that are consistent in thickness to ensure even cooking. Often, grocery stores like Wegmans offer “family packs” with multiple tenderloins, which are perfect for meal prepping or feeding a larger family. For this recipe, I typically use two tenderloins, each weighing between 1 to 1.5 pounds. This quantity not only serves six people generously but also provides fantastic leftovers for delicious lunches or quick dinners over the next couple of days. If you’re cooking for a smaller household or prefer a single meal, feel free to easily halve the recipe ingredients and adjust cooking times accordingly. Preparing the tenderloins by trimming off any excess fat or silver skin is a small step that makes a big difference in texture, ensuring a beautifully tender result.

The beauty of this sheet pan pork tenderloin recipe lies in its simplicity and the incredible flavor achieved with minimal effort. It’s a complete meal cooked on a single pan, which means less cleanup and more time to enjoy your evening. Beyond the convenience, roasting on a sheet pan ensures that all the ingredients benefit from the high heat, caramelizing the squash and tenderizing the pork to perfection. This method also guarantees an even distribution of flavors, as everything cooks together in delicious harmony.

Ingredients

  • 2 1-1.5 lb pork tenderloins, fat/gristle trimmed off if desired – I prefer to do this for a perfectly tender result!
  • 2 lbs cubed butternut squash
  • 2 cups red seedless grapes, thoroughly washed with stems removed for optimal roasting
  • 1 tsp dried minced onion
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp dried rosemary
  • 1 tsp sea salt, divided for optimal seasoning distribution
  • 1 tsp pepper, divided to enhance all ingredients
  • 4 cloves minced garlic
  • 3 tbsp olive oil

Instructions

  • Begin by preheating your oven to a robust 425°F (220°C). This high heat is crucial for achieving that desirable caramelization on your squash and a perfectly seared exterior on the pork. While the oven heats, prepare a large, rimmed baking sheet. Lining it with parchment paper or aluminum foil is highly recommended as it prevents sticking and makes cleanup a breeze. Carefully place the trimmed pork tenderloins in the center of the prepared baking sheet. Around the pork, arrange the cubed butternut squash in an even, single layer. Spreading the squash out ensures even roasting and promotes optimal browning, allowing its natural sweetness to develop beautifully.
  • In a small bowl, combine the dried minced onion, dried thyme, dried oregano, dried rosemary, minced garlic, ½ teaspoon of sea salt, and ½ teaspoon of black pepper. Mix these aromatic herbs and seasonings thoroughly until well combined. This blend will create a savory crust on your pork. Generously spread this herb mixture over all sides of both pork tenderloins. Press the seasoning firmly onto the meat to ensure it adheres well, forming a flavorful coating. Next, drizzle the remaining olive oil over both the seasoned pork tenderloins and the scattered butternut squash, ensuring everything is lightly coated. Finish by sprinkling the remaining ½ teaspoon of salt and ½ teaspoon of pepper evenly over the squash, enhancing its flavor as it roasts.
  • Place the baking sheet into the preheated oven and bake for 15 minutes. This initial roasting period allows the pork to begin cooking and the squash to soften and start caramelizing. After 15 minutes, carefully remove the pan from the oven. Using a spatula, gently stir and toss the butternut squash to ensure all sides get nicely roasted. This is also the perfect time to add the red seedless grapes to the sheet pan, distributing them evenly among the squash. Return the pan to the oven for an additional 15 minutes, or until the pork reaches an internal temperature of 145°F (63°C) when measured with a meat thermometer inserted into the thickest part of the tenderloin. The grapes will soften and burst, releasing their sweet juices, which will marry beautifully with the savory elements. Once cooked, remove from the oven, let the pork rest for a few minutes before slicing, and then serve this delightful one-pan meal immediately. Enjoy the harmonious blend of flavors and the simplicity of this incredible dish!
