Essential Ingredients for Your Marry Me Chicken Pasta

Flat lay of ingredients for Marry Me Chicken Pasta including gluten-free penne, chicken broth, chicken breast, spinach, spices, butter, half and half, olive oil, parmesan cheese, and sun-dried tomatoes.

Crafting this unforgettable Marry Me Chicken Pasta relies on a selection of readily available, yet impactful ingredients. Each component plays a crucial role in building the layers of flavor that make this dish so irresistible:

  • Boneless Skinless Chicken Breasts: Cut into convenient 1-2 inch cubes, these absorb the rich flavors of the sauce beautifully. For an even juicier and richer result, boneless, skinless chicken thighs can be used as an excellent alternative.
  • Salt and Pepper: The foundational seasonings that enhance the natural flavors of the chicken and perfectly balance the richness of the creamy sauce.
  • Butter (or Ghee) and Olive Oil: This dynamic duo provides the ideal fat blend for browning the chicken, adding a luxurious depth of flavor and richness to the initial stages of cooking.
  • Minced Garlic: The heart and soul of many Italian-inspired dishes, fresh minced garlic imparts a deep, aromatic, and savory base to this pasta. While fresh is always best, a good quality garlic powder can be used in a pinch for convenience.
  • Chicken Broth: More than just a liquid, chicken broth adds a savory depth to the dish and is essential for cooking the pasta right in the pan. Opt for low-sodium broth, nutrient-rich bone broth, or even a flavorful vegetable broth if preferred.
  • Gluten-Free Penne Pasta: I highly recommend the Jovial Foods brand for its excellent texture and consistency in gluten-free cooking. However, any short pasta shape, such as rotini, fusilli, or regular penne, will work wonderfully in this one-pot method.
  • Dried Oregano, Thyme, and Red Pepper Flakes: These classic Italian herbs and a touch of heat are what give this dish its signature profile. Feel free to adjust the amount of red pepper flakes to suit your preferred spice level, from a mild hint to a noticeable kick.
  • Sun-Dried Tomatoes: Do not skip these! They are the secret weapon, bringing an intense punch of sweet, tangy, and savory umami that truly defines the “Marry Me” flavor. Opt for oil-packed varieties for the best texture and flavor.
  • Raw Spinach: A fantastic addition for a boost of nutrients and a pop of color. The spinach wilts effortlessly into the hot pasta and creamy sauce, adding a fresh, earthy note without overpowering the dish.
  • Half & Half or Original Nutpods: This is where the magic happens for the creamy sauce. Half & half provides a traditional rich texture, while Original Nutpods offer a perfect dairy-free, whole-food alternative that achieves a luxurious creaminess without dairy. Heavy cream can also be used for an even more indulgent sauce if you’re not dairy-free.
  • Grated Parmesan Cheese: A sprinkle of grated Parmesan adds a final layer of salty, nutty umami and contributes to the overall creaminess. For a dairy-free or vegan version, simply use your favorite vegan Parmesan substitute or omit it entirely.
  • Fresh Basil: While optional, a generous scattering of fresh basil leaves, either chopped or torn, brightens the entire dish with its vibrant aroma and peppery-sweet flavor, providing a beautiful garnish.

Effortless Steps to Craft Your Marry Me Chicken Pasta

Creating this delicious one-pot meal is straightforward and designed for maximum flavor with minimum fuss. Follow these simple steps to bring the magic of Marry Me Chicken Pasta to your dinner table:

Step-by-step process photos of the first 4 steps showing how to start cooking Marry Me Chicken Pasta in one pan.

Step 1: Sear the Chicken. Begin by heating the butter and olive oil in a large, deep skillet or Dutch oven over medium-high heat. Once shimmering, add your cubed chicken pieces, spreading them out in a single layer. Generously sprinkle the chicken with half of the salt and all of the pepper to season it as it cooks.

Step 2: Brown and Set Aside. Cook the chicken for 4-6 minutes, stirring occasionally, until it’s beautifully browned on all sides and cooked through. Remove the cooked chicken from the skillet and set it aside on a plate; it will be added back later.

Step 3: Aromatic Garlic. To the same skillet (no need to clean it – those browned bits are flavor!), add the minced garlic. Stir continuously for about 30 seconds until the garlic becomes fragrant and lightly golden. Be careful not to burn it.

Step 4: Build the Liquid Base. Pour in the chicken broth, scraping the bottom of the pan with a wooden spoon or spatula to deglaze it. This releases all the delicious browned bits from the chicken and garlic, infusing the broth with incredible flavor. Add the uncooked pasta, red pepper flakes, oregano, thyme, and the remaining salt. Stir everything together, bring the mixture to a rolling boil, then reduce the heat to a simmer.

Step 5: Cook the Pasta. Let the pasta simmer gently for 11-12 minutes, stirring occasionally to prevent sticking and ensure even cooking. Continue cooking until the pasta is al dente (tender with a slight bite) and most of the liquid has been absorbed, leaving a thickened, flavorful sauce.

Step 6: Reintroduce Chicken. Once the pasta is cooked, return the previously seared chicken pieces to the skillet, ensuring they are evenly distributed throughout the pasta.

Step 7: Add Sun-Dried Tomatoes & Spinach. Stir in the chopped sun-dried tomatoes and fresh spinach. Continue to simmer for just another minute or two, stirring gently until the spinach has completely wilted into the hot pasta and sauce.

Step 8: Finish with Creaminess. Remove the skillet from the heat. Stir in the half & half (or Nutpods) and grated Parmesan cheese until the sauce becomes wonderfully creamy and cohesive. Serve immediately, garnished with fresh basil and an extra sprinkle of Parmesan cheese if desired. Enjoy your homemade, comforting masterpiece!

Customizing Your Marry Me Chicken Pasta: Substitutions & Swaps

One of the best aspects of this Marry Me Chicken Pasta recipe is its adaptability. Feel free to customize it to your taste preferences or dietary needs:

  • For a Lighter Take: If you’re aiming for a lighter version, consider using low-fat milk or even more chicken broth in place of half & half, and reduce or skip the cheese. The sun-dried tomato cream sauce is so inherently bold and rich, it will still deliver fantastic flavor.
  • Dairy-Free Delight: This recipe easily transforms into a dairy-free dream. Simply use Original Nutpods (or your favorite unsweetened, unflavored dairy-free cream alternative), vegan butter or ghee, and a high-quality dairy-free Parmesan substitute. The sauce will maintain its beautiful creaminess and vibrant flavor.
  • Gluten-Free Assurance: To ensure your meal remains completely gluten-free, always opt for a certified gluten-free penne brand, such as Jovial. Most grocery stores offer a good selection of gluten-free pasta options.
  • Protein Power: Don’t limit yourself to chicken! Cooked shrimp or Italian sausage would be delicious additions. For a vegetarian option, consider adding chickpeas or white beans, or simply load up on extra vegetables.
  • Veggie Boost: Enhance the nutritional value and flavor by incorporating other vegetables. Sautéed mushrooms, diced bell peppers, or even kale can be added alongside the spinach.

Storage & Reheating Tips for Leftovers

This Marry Me Chicken Pasta is just as delicious the next day! Here’s how to properly store and reheat your leftovers:

  • Storage: Allow the pasta to cool completely before transferring it to an airtight container. It will keep beautifully in the refrigerator for 3-4 days.
  • Reheating: To reheat, gently warm the pasta on the stovetop over medium-low heat. The sauce may thicken considerably after refrigeration, so add a splash of chicken broth or water to loosen it up and restore its creamy consistency. Stir occasionally until thoroughly heated through. It reheats wonderfully, often tasting even better as the flavors have more time to meld!

Frequently Asked Questions (FAQs) About Marry Me Chicken Pasta

What is Marry Me Chicken Pasta?

Marry Me Chicken Pasta is a beloved one-pot dish featuring tender chicken breast, penne pasta, and fresh spinach, all enveloped in a rich and creamy sauce infused with savory garlic, aromatic herbs, and the distinct sweet-tart flavor of sun-dried tomatoes. It’s inspired by the famous “Marry Me Chicken” recipe, adapted into a convenient and delightful pasta meal.

Why is it called Marry Me Chicken?

The charming name “Marry Me Chicken” comes from the widely held belief that this dish is so extraordinarily delicious, it could prompt a marriage proposal! While we can’t guarantee wedding bells, we can certainly promise that this creamy chicken and sun-dried tomato pasta recipe is one of the most flavorful and satisfying meals you’ll ever prepare.

Can I use chicken thighs or rotisserie chicken for this recipe?

Absolutely! Chicken thighs are a fantastic choice for this recipe; they tend to be juicier and can add an even richer flavor profile to the dish. If you’re short on time, using pre-cooked rotisserie chicken is an excellent shortcut. Simply shred or dice the rotisserie chicken and stir it into the skillet during the final steps (Step 6) to warm through, creating a quick and easy rotisserie chicken pasta.

Is this recipe truly a one-pot meal?

Yes, it is! The beauty of this Marry Me Chicken Pasta is that the pasta cooks directly in the flavorful chicken broth and sauce, absorbing all those delicious flavors. This means fewer dishes to wash and a more cohesive, deeply flavored final product. You’ll only need one large skillet or Dutch oven from start to finish (plus a plate for setting aside the chicken temporarily).

How can I adjust the spice level in this pasta?

The red pepper flakes are responsible for the gentle warmth in this dish. If you prefer a milder pasta, reduce the amount of red pepper flakes or omit them entirely. For those who love a bit more heat, feel free to increase the amount to ¾ teaspoon or even a full teaspoon. You can also add a pinch more right before serving.

This creamy tomato chicken pasta has undeniably become a cherished go-to meal in our home, consistently delivering comfort and satisfaction. We sincerely hope it finds a similar special place on your dinner rotation. Whether you’re meticulously planning a cozy dinner for loved ones or simply in need of a quick, easy, and incredibly flavorful weeknight pasta idea, this one-pot dish stands ready to deliver exceptional comfort and robust flavor in every single bite.

One Pot Marry Me Chicken Pasta

By: Mary Smith
Prep: 10 minutes
Cook: 20 minutes
Total: 30 minutes
Yield: 6 people
This creamy Marry Me Chicken Pasta is a one-pot dream dinner bursting with sun-dried tomato flavor and tender chicken. Ready in 30 minutes, and perfect for date night or weeknight comfort. It’s the kind of one-pot chicken pasta that’s rich, flavorful, and surprisingly simple.

Equipment

  • large skillet

Ingredients

  • 1.5 lbs boneless skinless chicken breasts, cut into 1-2 inch pieces
  • 1 tsp salt, divided
  • ½ tsp pepper
  • 1 tbsp butter, or ghee
  • 1 tbsp olive oil
  • 3 cloves minced garlic
  • 4.5 cups chicken broth
  • 12 oz gluten free penne pasta, I like Jovial Foods brand
  • 1 tsp oregano
  • 1 tsp thyme
  • ½ tsp red pepper flakes
  • 7 oz sun-dried tomatoes, drained and roughly chopped
  • 3 cups raw spinach
  • ¾ cup Original Nutpods, or Half & Half
  • ½ cup grated parmesan cheese
  • Fresh basil leaves, chopped, for garnish

Instructions

  • Season the cubed chicken generously with ½ tsp salt and ½ tsp pepper, ensuring each piece is well coated.
  • In a large skillet, heat the butter and olive oil over medium-high heat. Add the seasoned chicken and cook for 4-6 minutes, stirring occasionally, until it’s beautifully browned and fully cooked through. Remove the chicken from the pan and set it aside.
  • To the same skillet, add the minced garlic and stir for 30 seconds until it becomes wonderfully fragrant.
  • Pour in the chicken broth and stir, actively scraping up any browned bits from the bottom of the pan to deglaze it. This step adds immense flavor to your sauce.
  • Add the uncooked penne pasta, red pepper flakes, oregano, thyme, and the remaining ½ tsp salt to the skillet. Stir thoroughly, bring the mixture to a boil, then reduce the heat and simmer for 11-12 minutes. Stir occasionally to prevent sticking, cooking until the pasta is al dente and most of the broth has been absorbed.
  • Return the cooked chicken to the pan. Add the drained and chopped sun-dried tomatoes and fresh spinach. Stir over medium heat for about a minute, just until the spinach has wilted completely into the pasta.
  • Remove the skillet from the heat. Stir in the half & half (or Nutpods) and grated parmesan cheese until the sauce is beautifully creamy and smooth. Serve immediately, garnished with fresh basil and an extra sprinkle of grated Parmesan cheese. Enjoy every comforting bite!

Notes

  • A key to this “one-pan” magic is that there’s no need to cook the pasta separately. You’ll add the uncooked pasta directly into the skillet in Step 5, which saves time and dishes!
  • If you’re following a dairy-free diet, ensure you swap out the butter for your preferred vegan butter or ghee and use a high-quality non-dairy alternative for the half & half, such as Original Nutpods. Garnish with vegan Parmesan cheese or simply omit the cheese.
  • Leftovers store wonderfully. Place any remaining pasta in an airtight container and refrigerate for up to 3-4 days. To reheat, warm gently on the stovetop, adding a small amount of butter or a splash of water/chicken stock to help loosen and revitalize the sauce and pasta. Serve warm with an optional sprinkle of fresh basil or a few red pepper flakes for an added kick.
