Essential Ingredients: Notes for Your Perfect Chicken Marsala

Understanding each component is key to mastering this exceptional Chicken Marsala Fettuccine. Here’s a detailed look at the ingredients and how they contribute to the final masterpiece:

Chicken Breasts: We recommend using boneless, skinless chicken breasts. To ensure even cooking and quick preparation, larger breasts should be cut in half lengthwise. Pounding them to a uniform ¼-inch thickness also helps create tender cutlets that cook rapidly and absorb the sauce beautifully. You could also use chicken tenderloins for a similar effect.

Prosciutto: While optional, prosciutto is a game-changer in this recipe. Its salty, savory, and slightly sweet notes, combined with its ability to crisp up beautifully, add an incredible layer of flavor and texture to the dish. Don’t skip it if you want that authentic Italian depth and a delightful crunch against the tender chicken and pasta. For a vegetarian option, you can omit it entirely.

Mushrooms: Cremini mushrooms, also known as baby bellas, are our top choice for their rich, earthy flavor and firm texture that holds up well in the sauce. However, common white button mushrooms are a perfectly acceptable and delicious alternative. For an even deeper umami, consider a mix of wild mushrooms like shiitake or oyster mushrooms.

Tapioca Flour: This gluten-free flour is crucial for coating the chicken breasts. It helps create a beautiful golden-brown crust when seared, locking in moisture and adding a subtle crispiness that contrasts wonderfully with the tender interior. It’s a fantastic alternative to traditional wheat flour for those needing to avoid gluten.

Ghee: Ghee, clarified butter, offers a rich, nutty flavor and a high smoke point, making it excellent for searing. For individuals with dairy allergies or sensitivities, vegan butter is an ideal substitute, providing a similar richness without the dairy. If dairy isn’t a concern, traditional butter can also be used.

Marsala Wine: The heart of any Marsala dish is, of course, the wine. Dry Marsala wine is preferred for this recipe as it contributes a complex, nutty, and slightly sweet flavor that defines the sauce. You can find Marsala wine at most liquor stores or use Marsala cooking wine from the grocery store. While most of the alcohol cooks off during the reduction process, leaving behind pure flavor, if you prefer to avoid alcohol entirely, a blend of chicken broth with a splash of balsamic vinegar and a hint of brown sugar can offer a similar depth, though the flavor profile will differ slightly. We highly recommend using authentic Marsala wine for the best results.

Chicken Broth: This forms the foundational liquid for our rich sauce. Good quality chicken broth, stock, or even bone broth will all work well, each contributing slightly different nuances to the overall flavor. Choose a low-sodium option to better control the seasoning of your dish.

Full-Fat Coconut Milk: To achieve that luxurious, creamy texture characteristic of a classic cream sauce without any dairy, full-fat canned coconut milk is the secret ingredient. Don’t worry, the coconut flavor is remarkably subtle and practically disappears amidst the other bold ingredients, leaving only richness. Original flavored Nutpods also make an excellent dairy-free alternative. For those without dairy restrictions, half & half or heavy cream can be used for a more traditional creamy Marsala sauce.

Arrowroot Powder: This gluten-free starch is our thickening agent for the Marsala sauce, providing a smooth, glossy consistency without any graininess. It functions much like cornstarch but is often preferred in gluten-free cooking for its neutral flavor and clear finish. Mixing it with a little water to form a slurry before adding to the hot sauce is essential to prevent lumps.

Shallot & Garlic: These aromatic powerhouses lay the groundwork for the sauce’s depth. Finely diced shallots offer a milder, sweeter onion flavor than traditional onions, while fresh minced garlic provides that unmistakable pungent kick. Always opt for fresh garlic for the most vibrant flavor.

Gluten-Free Fettuccine: For the pasta component, we recommend a high-quality gluten-free fettuccine. Brands like Jovial Foods are excellent choices, offering a texture that closely mimics traditional pasta. Alternatively, you can use gluten-free tagliatelle or any other gluten-free pasta shape you prefer. Ensure you cook it al dente according to package directions for the best texture in your finished dish.

Mastering the Dish: How to Make This Creamy Chicken Marsala Pasta

the first four steps for making gluten free chicken marsala

This detailed guide will walk you through each step to create a memorable Chicken Marsala Fettuccine, ensuring a delicious and perfectly executed meal.

Begin by cooking your chosen gluten-free fettuccine pasta according to the package directions. It’s crucial to cook it until it’s al dente – meaning it’s firm to the bite – as it will continue to cook slightly when added to the sauce. Overcooked gluten-free pasta can become mushy, so keep a close eye on it. Once cooked, drain the pasta thoroughly and set it aside.

Step 1: Prepare the Chicken

While your pasta is cooking, prepare the chicken breasts. If you have larger chicken breasts, slice them in half horizontally to create 4-6 thinner cutlets. Lay each chicken piece between two sheets of parchment paper or plastic wrap and pound them to a uniform ¼-inch thickness. This ensures they cook quickly and evenly. Season both sides of the pounded chicken liberally with sea salt, freshly ground black pepper, and garlic powder. This foundational seasoning is vital for flavor development.

Step 2: Coat the Chicken

In a shallow dish, place the tapioca flour. Dredge each seasoned chicken cutlet in the tapioca flour, ensuring it’s evenly coated on all sides. Shake off any excess flour. This coating will give your chicken a delightful crispy exterior when seared.

Step 3: Sear the Chicken

Heat 1 tablespoon of ghee (or vegan butter) and 1 tablespoon of olive oil together in a large, heavy-bottomed skillet or non-stick pan over medium-high heat. Once the fat is shimmering, carefully add the coated chicken cutlets to the pan in a single layer. Avoid overcrowding the pan; you may need to cook the chicken in two batches. Sear for approximately 4 minutes per side, or until the chicken is beautifully golden brown and cooked through. The internal temperature should reach 165°F (74°C). Transfer the seared chicken to a plate and set aside, covering it loosely with foil to keep warm. If cooking in batches, add a little more oil or ghee to the pan if needed before the second batch.

Step 4: Crisp the Prosciutto

Using the same skillet (no need to clean it, as the fond adds flavor!), add the prosciutto pieces. Cook for 1-2 minutes over medium heat, stirring occasionally, until the prosciutto becomes delightfully crisp. Once crispy, remove the prosciutto from the pan and place it on a paper towel-lined plate to drain excess fat. The crispy prosciutto will be a fantastic garnish.

Step 5: Sauté Aromatics and Deglaze

Add the remaining 1 tablespoon of ghee to the skillet. Once melted, add the diced shallot, minced garlic, and sliced mushrooms. Sauté for about 5 minutes, stirring frequently, until the mushrooms have softened and released their moisture, and the shallot and garlic are fragrant. Pour in the ¾ cup of Marsala wine. Use a wooden spoon to scrape up any delicious brown bits (fond) from the bottom of the pan; these bits are packed with flavor and will enrich your sauce. Allow the wine to simmer and reduce by about half, which typically takes 3-4 minutes. This process concentrates the wine’s flavor and burns off most of the alcohol.

Step 6: Build and Thicken the Sauce

Stir in the ½ cup of chicken broth and the ¼ cup of full-fat coconut milk (or Original Nutpods). Bring the mixture to a gentle boil. In a small separate bowl, whisk together the 1 teaspoon of arrowroot powder and 1 tablespoon of water to create a smooth slurry. Pour this slurry into the simmering sauce in the skillet, stirring continuously for 1-2 minutes. You’ll notice the sauce begin to thicken to a luxurious, velvety consistency. If the sauce becomes too thick, you can thin it with a splash more broth or coconut milk.

Step 7: Simmer the Chicken

Carefully return the seared chicken cutlets to the pan, nestling them into the thickened Marsala sauce. Reduce the heat to medium-low and let the chicken simmer for another 5 minutes. This allows the chicken to finish cooking through, if necessary, and more importantly, to absorb the incredible flavors of the rich sauce. Taste the sauce and adjust the seasoning with additional salt and pepper as needed.

Step 8: Combine and Serve

Now you have a couple of options for serving. You can either remove the chicken from the pan, set it aside, and add the cooked fettuccine directly to the sauce. Toss the pasta gently to ensure every strand is coated in the creamy Marsala sauce, then nestle the chicken back into the pan. Alternatively, you can keep the chicken in the sauce and serve generous portions of the chicken and sauce directly over individual beds of the cooked fettuccine noodles. Garnish with the crispy prosciutto, a sprinkle of fresh parsley, and freshly grated Parmesan cheese (if not strictly dairy-free) for an extra touch of elegance and flavor. Serve immediately and enjoy your homemade, restaurant-quality Chicken Marsala Fettuccine!

Expert Tips & Tricks for Perfect Results

Enhance your cooking experience and ensure a flawless dish with these helpful tips:

Storage: Leftover Chicken Marsala Fettuccine can be stored in an airtight container in the refrigerator for up to 4 days. When reheating, gently warm on the stovetop over low heat, adding a splash of chicken broth or coconut milk if the sauce has thickened too much.

Freezing: If you’re considering freezing this recipe, it’s highly recommended to omit the pasta. Gluten-free pasta, particularly fettuccine, tends to lose its desirable texture and can become mushy or brittle when frozen and reheated. Instead, freeze the chicken Marsala and prosciutto components on their own in a freezer-safe, airtight container for up to 3 months. When you’re ready to enjoy, thaw it in the refrigerator overnight, gently reheat, and then cook a fresh batch of gluten-free pasta to serve alongside.

Non-Stick Pan: Using a high-quality non-stick pan is paramount for this recipe, especially when searing the chicken. It prevents the tapioca-floured chicken from sticking to the surface, ensuring a beautiful, even golden-brown crust without tearing or leaving behind fragments. It also makes for easier cleanup and helps maintain the integrity of your fond for the sauce.

Pre-Cooked Pasta: If you want to save time, you can cook the gluten-free pasta slightly ahead of time. However, ensure it’s slightly undercooked (more than al dente) if you plan to add it directly to the sauce to toss, as it will continue to cook and absorb liquid. You can also toss it with a tiny bit of olive oil to prevent sticking if holding for a short period.

Wine Alternatives: While dry Marsala wine is irreplaceable for the authentic flavor, if you truly cannot use it, a blend of dry sherry (for similar notes) or even a rich mushroom broth with a splash of balsamic vinegar can offer a decent, albeit different, flavor profile. Remember, the alcohol cooks out, leaving only flavor.

Garnish with Fresh Herbs: Don’t underestimate the power of fresh herbs! A sprinkle of fresh parsley or chives at the end adds a pop of color and a fresh, aromatic finish that brightens the rich sauce.

Flavor Depth: For an even deeper flavor in your sauce, consider adding a pinch of dried thyme or a bay leaf during the simmering stage. Remove the bay leaf before serving.

Recipe FAQ’s: Your Questions Answered

What does Marsala wine taste like?

Marsala wine is a fortified wine from Sicily, Italy, known for its distinct and complex flavor. It comes in both sweet and dry varieties. Dry Marsala, which is preferred for savory cooking like this recipe, offers a rich, nutty, and slightly caramelized taste with notes of brown sugar, dried fruits like figs or raisins, and sometimes even vanilla or licorice. It’s a key ingredient that provides a profound depth of flavor to the sauce, making it incredibly unique and irresistible.

What can I use instead of Marsala wine?

While Marsala wine truly defines this dish, there are alternatives if you cannot find it or prefer to avoid alcohol. Dry sherry is often cited as the closest substitute, as it also offers a nutty, rich flavor profile. For a completely non-alcoholic option, you could try using a mixture of chicken broth with a few splashes of balsamic vinegar and a teaspoon of brown sugar or maple syrup to mimic the wine’s acidity and sweetness. Mushroom broth can also provide an umami depth. Keep in mind that these substitutions will alter the authentic flavor to some extent, but can still result in a delicious meal.

What sides go well with fettuccine chicken Marsala?

Since this dish includes hearty fettuccine, it’s often satisfying enough on its own. However, if you wish to add a fresh green element to balance the richness, a simple side salad with a vinaigrette dressing would be perfect. Roasted or steamed green vegetables like asparagus, green beans, or broccoli florets are also excellent choices, providing a healthy crunch and vibrant color. A crusty loaf of gluten-free bread is also wonderful for soaking up any remaining delicious sauce!

Can I prepare this Chicken Marsala Fettuccine ahead of time?

Yes, you can certainly prepare parts of this dish in advance. The chicken cutlets can be pounded and seasoned a day ahead and stored in the refrigerator. The Marsala sauce can also be made a day or two in advance and stored separately. When ready to serve, gently reheat the sauce, sear the chicken (if not already done), and cook fresh gluten-free pasta. Then combine as directed. This approach helps maintain the best texture for both the chicken and the pasta.

Why is it important to pound the chicken?

Pounding the chicken to a uniform thickness is a critical step for several reasons. Firstly, it ensures that all pieces of chicken cook evenly and quickly, preventing some parts from being overcooked while others are undercooked. Secondly, thinner chicken breasts become incredibly tender and are more adept at absorbing the flavors of the Marsala sauce, resulting in a more succulent and flavorful bite. Lastly, it dramatically reduces cooking time, making this a truly fast weeknight meal.

Total: 30 minutes
Yield: 6 people
This Chicken Marsala Fettuccine with Prosciutto is a delicious gluten free & dairy free spin on the classic recipe! It’s simple enough to make for a quick weeknight meal, yet fancy enough for a dinner party. Tender chicken, mushrooms, prosciutto and gluten free pasta tossed in a velvety marsala wine sauce. Simply divine!

Equipment

  • Large Skillet

Ingredients

  • 1.5 lbs chicken breasts, cut in half to create 4-6 thinner breasts
  • ½ tsp sea salt
  • ½ tsp garlic powder
  • cup tapioca flour
  • 2 tbsp ghee, divided, or use vegan butter for dairy free
  • 1 tbsp olive oil
  • 1 shallot, diced
  • 2 cloves minced garlic
  • 6 pieces prosciutto, cut into 2 inch pieces
  • 8 oz sliced mushrooms
  • ¾ cup marsala wine
  • ½ cup chicken broth
  • ¼ cup full fat coconut milk, or Original flavored Nutpods, or half & half if you don’t need to be dairy free
  • 1 tsp arrowroot powder
  • 1 tbsp water
  • 12 oz Jovial Foods gluten free fettuccine, or tagliatelle, or pasta of choice

Instructions

  1. Cook gluten free pasta according to package directions until al dente, drain, and set aside.
  2. Meanwhile, pound the chicken breast halves to ¼ inch thickness. Sprinkle each piece of chicken with salt, pepper, and garlic powder.
  3. Heat 1 tbsp ghee and 1 tbsp olive oil together in a large non-stick pan over medium high heat. Coat each piece of chicken in tapioca flour. Add them to the pan and cook for 4 mins per side until golden brown. You may need to do this in two batches depending on how many pieces of chicken you have. Feel free to add more oil and/or ghee in between batches. Set the chicken aside.
  4. Add the prosciutto pieces to the pan and cook them for 1-2 minutes until they begin to crisp up. Remove and set aside.
  5. Add in the additional 1 tbsp ghee, shallots, garlic, and mushrooms. Saute for 5 mins until they begin to soften. Add in the marsala wine and stir, scraping up any brown bits from the bottom of the pan. Let the wine reduce by about half (this should take 3-4 minutes). Add in the chicken broth and coconut milk (or Nutpods) and stir. Bring it to a boil.
  6. Mix the arrowroot and water together to form a slurry. Pour it into the pan and stir for 1-2 minutes as the sauce thickens over medium heat.
  7. Add the chicken back into the pan and let it simmer on medium low heat for 5 minutes while the chicken finishes cooking and absorbs the sauce flavors. Season with salt and pepper to taste.
  8. At this point you can remove the chicken and set aside, add the cooked pasta to the sauce and toss to combine, then nestle the chicken back into the pan. OR, keep the chicken in the sauce and serve it all directly on top of the noodles. Serve with crispy prosciutto, fresh parsley, and grated Parmesan cheese (if desired and not dairy-free)!

Notes

Nutrition Info is an estimate for ⅙ of the total recipe.

Storage: Store leftover chicken marsala fettuccine in an airtight container in the refrigerator for up to 4 days.

Freezing: If you plan to freeze this recipe, I recommend omitting the pasta. Gluten free pasta does not freeze well. You can always freeze the chicken marsala and prosciutto on its own in an airtight container for up to 3 months. Cook fresh pasta and add it when you’re planning to serve.

Non-stick pan: Using a non-stick pan is important to ensure the chicken doesn’t get stuck to the pan when you sear it.
