The Viral Sensation: A Culinary Phenomenon Reimagined

The baked feta pasta trend swept across social media platforms, particularly TikTok, captivating home cooks worldwide with its simplicity and incredible flavor. Originating from Finnish blogger Liemessa’s “Uunifetapasta”, the concept quickly gained international traction. The version that went truly viral in the US was popularized by Grilled Cheese Social, leading to a worldwide feta shortage and countless adaptations. Our version celebrates this beloved dish by adding our unique touch: tender shrimp, aromatic whole roasted garlic, and a commitment to a gluten-free experience.

The beauty of this dish lies in its effortlessness. You simply combine feta cheese, cherry tomatoes, and olive oil in a baking dish, roast until bubbly and golden, then mix in cooked pasta. The heat from the oven transforms the feta into a creamy, tangy sauce that coats every strand of pasta beautifully. Our inclusion of shrimp not only boosts the protein content but also adds a delightful seafood element, cooking perfectly alongside the other ingredients during the final stages of baking. This ensures a truly one-pan (or rather, one-dish-plus-pot) experience with minimal washing up, making it an ideal choice for busy weeknights or relaxed weekend meals.

Why You’ll Love This Gluten-Free Baked Feta Pasta with Shrimp

Beyond its viral fame, there are numerous reasons why this baked feta pasta has become a staple in many kitchens, and why our gluten-free shrimp-infused rendition stands out.

  • Effortless One-Dish Preparation: The primary appeal is undoubtedly the minimal effort involved. Most of the cooking happens in the oven, freeing you up to attend to other tasks or simply relax. The roasted ingredients coalesce into a rich sauce directly in the baking dish, reducing the need for multiple pots and pans.
  • Bursting with Flavor: Roasting the feta and cherry tomatoes caramelizes their natural sugars and intensifies their flavors. The feta becomes wonderfully creamy and tangy, while the tomatoes burst with sweet juiciness. Our addition of whole roasted garlic cloves melts into a mellow, sweet paste, providing an incredible depth of flavor that complements the richness of the feta and the sweetness of the tomatoes.
  • Gluten-Free Friendly: For those with gluten sensitivities or dietary preferences, finding delicious and easy pasta recipes can be a challenge. This recipe seamlessly incorporates gluten-free pasta, ensuring that everyone can enjoy this viral sensation without compromise. We share tips below on selecting the best gluten-free pasta for optimal texture.
  • Added Protein Power with Shrimp: The inclusion of shrimp elevates this dish from a side to a complete meal. Shrimp cooks quickly and adds a delicate, sweet flavor that pairs beautifully with the Mediterranean profile of feta and tomatoes. It’s also a lean source of protein, making this a more substantial and satisfying dish.
  • Customizable and Versatile: While our recipe is a perfected version, the core concept is incredibly adaptable. You can easily adjust ingredients to suit your taste, explore different herbs, or even experiment with other vegetables.
  • Impressive Yet Simple: Despite its ease of preparation, the final dish looks and tastes incredibly gourmet. It’s perfect for entertaining guests who will be impressed by its vibrant colors and complex flavors, all without knowing how little effort went into making it.

Key Ingredients for Your Gluten-Free Baked Feta Pasta with Shrimp

You’ll be amazed at how a few simple, high-quality ingredients can transform into such a spectacular meal. Here’s what you’ll need:

  • Feta Cheese: A 5-7 oz block of feta is ideal. For an authentic and superior flavor, I highly recommend seeking out genuine sheep’s milk feta from Greece, often available at stores like Whole Foods. I personally find that sheep and goat cheeses are often easier to digest than cow’s milk alternatives, and the taste is simply unparalleled – rich, briny, and perfectly crumbly. If you can only find crumbled feta, don’t worry! Simply press the crumbles firmly together in the center of your baking dish to form a cohesive block.

    • Feta Alternative: Not a fan of feta? This recipe would be equally delicious with a block of soft goat cheese (chevre), which offers a similar creamy texture and tangy profile, albeit with a slightly different flavor nuance.
  • Cherry Tomatoes: One pound of vibrant cherry or grape tomatoes. These little gems burst in the oven, releasing their sweet juices to form the base of our luscious sauce.
  • Whole Head of Garlic: This is where a secret layer of flavor comes in! Cut one entire head of garlic horizontally in half, with the skin still on, to expose the cloves. Roasting the garlic mellows its sharpness and transforms it into a sweet, buttery paste that you can easily squeeze out and mix into the sauce.
  • Extra Virgin Olive Oil: A good quality extra virgin olive oil is crucial here, as it plays a significant role in the flavor of the roasted vegetables and cheese. You’ll need about 2 tablespoons, separated for different stages.
  • Fresh Basil: Approximately ¼ cup of chopped fresh basil adds a fragrant, herbaceous note that brightens the entire dish and complements the tomatoes and feta beautifully.
  • Fresh Spinach: Two generous handfuls of fresh spinach, stirred in at the end, will wilt into the hot pasta, adding a touch of green and extra nutrients.
  • Salt and Pepper: To taste. Remember that feta cheese is naturally quite salty, so be sure to taste your sauce before adding too much extra salt. Freshly ground black pepper adds a lovely bite.
  • Raw Peeled and Deveined Shrimp: One pound of raw, peeled, and deveined shrimp. I often buy large bags of frozen shrimp from Costco or Trader Joe’s and thaw them quickly under cold running water in a colander. You can choose to leave the tails on for presentation or remove them for easier eating – entirely up to your preference.
  • Gluten-Free Pasta: One box of your favorite gluten-free pasta. I’ve found Jovial Foods brown rice pasta to be excellent for its texture and ability to hold up well in sauces, but any shape or brand you enjoy will work. For a lower-carb option, consider spaghetti squash or your preferred vegetable pasta.

You’ll also need a 9×13 inch baking dish for this recipe.

Step-by-Step Guide: How to Make Gluten-Free Baked Feta Pasta with Shrimp

Follow these simple instructions to create this delicious and satisfying meal:

  1. Preheat Oven: Begin by preheating your oven to 400°F (200°C). This ensures your oven is at the optimal temperature for roasting as soon as your ingredients are ready.
  2. Arrange Ingredients for Roasting: Place the block of feta cheese directly in the center of your 9×13 inch baking dish. Arrange the cherry tomatoes evenly around the feta, creating a colorful border. Add the two halves of the head of garlic, cut-side up, amongst the tomatoes. Drizzle 1 tablespoon of extra virgin olive oil generously over the feta, tomatoes, and garlic. Season everything with a sprinkle of sea salt and freshly ground black pepper.
  3. Initial Bake: Transfer the baking dish to the preheated oven and bake for 15 minutes. During this time, the feta will soften, and the tomatoes will begin to burst and release their juices.
  4. Cook Pasta: While the feta and tomatoes are baking, bring a large pot of salted water to a rolling boil. Cook your chosen gluten-free pasta according to the package directions until al dente. Gluten-free pasta can sometimes get mushy if overcooked, so keep a close eye on it. Once cooked, drain the pasta and set it aside.
  5. Prepare and Add Shrimp: If your shrimp was previously frozen, ensure it is fully thawed and patted dry. You can leave the tails on or remove them as preferred. After the initial 15 minutes of baking, carefully remove the hot baking dish from the oven. Arrange the raw shrimp in an even layer on top of the tomatoes and around the feta. Drizzle the shrimp with the remaining 1 tablespoon of olive oil and sprinkle with a little more salt and pepper.
  6. Continue Baking with Shrimp: Return the baking dish to the oven and bake for an additional 7 minutes. The shrimp will start to turn pink and opaque.
  7. Broil for Perfection: After 7 minutes, carefully toss the shrimp with some of the olive oil and tomatoes in the baking dish. Increase the oven temperature to Broil and continue cooking for the final 8 minutes. This high heat will help the tomatoes char slightly, intensifying their sweetness and creating a beautiful roasted finish on the shrimp. Keep a watchful eye during this stage to prevent anything from getting too browned or burnt. The total cook time in the oven will be 30 minutes (15 mins initial bake + 7 mins with shrimp + 8 mins broil).
  8. Assemble the Dish: Once baking is complete, remove the dish from the oven. Carefully take out the shrimp and the roasted garlic halves and set them aside on a plate. Add the fresh spinach directly to the hot baking dish with the feta, tomatoes, and olive oil. Stir well; the residual heat will quickly wilt the spinach into the sauce.
  9. Combine and Serve: Add your cooked and drained gluten-free pasta and the fresh chopped basil to the baking dish. Now, take the roasted garlic cloves – they should be soft enough to easily pop out of their skins. You can eat them whole for a burst of sweet garlic flavor, or chop them finely before adding them to the pasta. Mix everything thoroughly until the pasta is coated with the creamy feta and tomato sauce. Taste and adjust seasoning with salt and pepper as needed. Finally, top the pasta with the reserved roasted shrimp. Serve immediately and enjoy!

Tips for the Perfect Gluten-Free Baked Feta Pasta

  • Quality Feta Matters: Investing in good quality sheep’s milk feta makes a noticeable difference. Its creaminess and tangy flavor are superior to pre-crumbled or cow’s milk feta.
  • Don’t Overcrowd: Ensure your baking dish isn’t too crowded, especially with the tomatoes. Give them space to roast and burst evenly.
  • Mind Your GF Pasta: Gluten-free pasta can be delicate. Cook it just until al dente to avoid a mushy texture. Some brands hold up better than others, so experiment to find your favorite.
  • Roasted Garlic Gold: Don’t skip roasting the whole head of garlic. It transforms from pungent to sweet and spreadable, adding an incredible depth of flavor that’s hard to replicate.
  • Broiler Beware: The broiler works quickly! Stay near the oven during the final broiling stage to ensure nothing burns. A minute can make all the difference.
  • Seasoning Check: Feta is salty. Always taste your sauce before adding extra salt at the end. You can always add more, but you can’t take it away.

Variations and Customizations for Your Baked Feta Pasta

One of the best things about this baked feta pasta recipe is its versatility. Once you have the basic technique down, feel free to get creative and adapt it to your preferences or what you have on hand.

  • Vegetarian/Vegan Options:

    • Tofu Feta: For a vegan version, use a block of firm or extra-firm tofu, pressed and marinated in lemon juice, olive oil, and herbs to mimic feta.
    • Plant-Based Protein: Omit the shrimp and add chickpeas, cannellini beans, or even a plant-based sausage.
  • Other Protein Additions:

    • Chicken: Cooked and shredded chicken breast can be stirred in at the end. For raw chicken, cut it into bite-sized pieces and add it along with the tomatoes and feta for a longer bake, ensuring it’s cooked through.
    • Sausage: Cooked Italian sausage (pork or chicken) can be crumbled and added.
    • Other Seafood: Scallops or small pieces of firm white fish would also cook beautifully in the oven with the tomatoes.
  • Add More Vegetables:

    • Bell Peppers: Sliced bell peppers (any color) can be added with the tomatoes for roasting.
    • Zucchini/Summer Squash: Diced zucchini or yellow squash would also roast well.
    • Mushrooms: Sliced mushrooms add an earthy depth.
    • Olives: Kalamata olives added at the end provide a briny, salty kick.
  • Spice It Up:

    • Add a pinch of red pepper flakes with the olive oil for a subtle heat, or more for a bolder kick.
  • Herb Variations:

    • While basil is classic, fresh oregano, thyme, or even a touch of rosemary can also be lovely additions.
    • A sprinkle of fresh parsley at the end adds freshness and color.
  • Different Cheeses:

    • If you truly can’t find feta or goat cheese, a block of cream cheese or even Boursin cheese (garlic & herb variety) could offer a similar creamy base, though the flavor profile would be different.
  • Low-Carb Options:

    • Instead of gluten-free pasta, serve the roasted feta, tomatoes, and shrimp over spiralized zucchini noodles (zoodles), spaghetti squash, or cauliflower rice for a lighter, lower-carb meal.

Serving Suggestions and Storage

This Gluten-Free Baked Feta Pasta with Shrimp is a complete meal on its own, but you can enhance the dining experience with a few simple additions.

  • Crusty Bread: A side of warm, crusty gluten-free bread is perfect for soaking up any remaining delicious sauce.
  • Fresh Salad: A simple green salad with a light vinaigrette makes for a refreshing contrast to the rich pasta.
  • Roasted Vegetables: If you’re not adding more vegetables directly to the pasta, a side of roasted asparagus or broccoli would be a great complement.

Storing Leftovers:
Leftover baked feta pasta can be stored in an airtight container in the refrigerator for up to 3-4 days.

Reheating:
To reheat, gently warm the pasta in a microwave or on the stovetop over medium-low heat, adding a splash of water or vegetable broth to loosen the sauce if it has thickened. Be careful not to overcook the shrimp during reheating, as it can become rubbery.

Frequently Asked Questions About Baked Feta Pasta with Shrimp

Here are answers to some common questions you might have about making this delicious dish:

Q: Can I use frozen cherry tomatoes?
A: While fresh cherry tomatoes are highly recommended for their texture and juiciness, you can use frozen ones in a pinch. However, they may release more water, making the sauce slightly thinner, and their texture might be softer.

Q: Can I prepare this dish ahead of time?
A: For best results, it’s ideal to prepare and serve this dish fresh. However, you can chop your garlic and basil, and thaw your shrimp in advance. The actual baking and combining process is so quick that full meal prep isn’t usually necessary. Leftovers store well, but the pasta is best immediately after mixing.

Q: Is it truly a one-pan meal?
A: It’s mostly a one-dish meal! The main sauce and proteins (feta, tomatoes, garlic, shrimp) cook in one baking dish. You will need a separate pot to cook the pasta, but that’s the only additional item.

Q: What if my feta doesn’t get creamy?
A: Ensure your feta block is not too old or dry. Authentic sheep’s milk feta tends to melt and become creamier than some drier, saltier varieties. Also, make sure your oven is adequately preheated and you’re using enough olive oil.

Q: Can I add other seasonings?
A: Absolutely! Dried oregano, a pinch of Italian seasoning, or a dash of smoked paprika could all be delicious additions to experiment with.

Q: What kind of gluten-free pasta works best?
A: Brown rice pasta (like Jovial Foods) tends to hold its shape and texture very well. Lentil or chickpea pastas also work, but be mindful of their cooking times as they can sometimes get softer more quickly.

Gluten Free Roasted Feta Pasta with Shrimp in a bowl

By: Mary Smith

Prep Time: 10 mins | Cook Time: 30 mins | Total Time: 40 mins

Yield: 6 people

This Gluten Free Baked Feta Pasta is my version of Tik Tok’s famous baked feta pasta! I’ve added in whole roasted cloves of garlic, tender shrimp, and gluten free pasta. Everything is baked in one dish, resulting in a creamy, decadent, cheesy tomato sauce. So easy and delicious!

Ingredients

  • 5-7 oz block of Feta cheese (I used traditional Sheep’s milk feta found at Whole Foods. Crumbled will work as well – simply press it together to form a large chunk. You can also sub goat cheese!)
  • 1 lb cherry tomatoes
  • 1 head garlic, skin on, cut in half to reveal cloves inside
  • 1 lb peeled/deveined raw shrimp, thawed if previously frozen
  • 2 tbsp extra virgin olive oil, separated
  • 2 handfuls raw spinach
  • ¼ cup chopped fresh basil
  • 1 box gluten-free pasta of choice (I like Jovial Foods gluten-free pasta)
  • Salt & pepper, to taste (Some feta is naturally pretty salty, so be sure to taste test before adding!)

Instructions

  1. Preheat your oven to 400 degrees.
  2. First, add your block of feta to your 9×13 baking dish. Place the tomatoes evenly all around the feta. Add your two halves of the head of garlic. Drizzle 1 tbsp olive oil over the feta, tomatoes, and garlic and sprinkle with sea salt and black pepper. Place the baking dish into the oven and bake for 15 minutes.
  3. Meanwhile, cook your pasta according to the package directions, drain, and set aside.
  4. Thaw the shrimp if previously frozen. You can leave the tails on or take them off – up to you. When the timer goes off, take the baking dish out and add the raw shrimp. Simply place them on top of the tomatoes in an even layer and drizzle with the additional 1 tbsp olive oil/sprinkle with salt and pepper. Set the timer for 7 additional minutes.
  5. Toss the shrimp with some of the olive oil and tomatoes. Turn the oven to Broil for the last 8 minutes of cook time. This helps to get the tomatoes nice and roasted! The total cook time is 30 minutes (15 mins, add shrimp + 7 mins, then 8 mins on broil). Keep an eye on it at the end to make sure everything isn’t getting too browned.
  6. Remove the baking dish from the oven. Remove the shrimp and garlic halves and set them aside on a plate. Add your fresh spinach to the baking dish and mix it with the hot feta cheese, tomatoes, and olive oil. It should wilt after stirring. Add in your cooked pasta, fresh basil, and cloves of garlic (I simply pop them out of the skin and eat the cloves whole, but you can chop them up before adding, if preferred). Season with salt and pepper as needed. Top with the roasted shrimp and enjoy!
