As the leaves begin to turn and the crisp autumn air sets in, there’s one beverage that truly signals the arrival of fall for many: the Pumpkin Spice Latte. That’s where this incredible **Creamy Cashew Pumpkin Spice Latte** comes in. It’s a delightful concoction of robust coffee, naturally creamy cashews, organic pumpkin puree, aromatic pumpkin pie spice, and a nourishing touch of collagen, crafting the perfect healthier fall drink you’ve been dreaming of.

I confess, I’m among the many who eagerly anticipate pumpkin spice season, often before September 1st even rolls around! However, my days of ordering the conventional Pumpkin Spice Latte from big chain coffee shops are long past. There are a couple of major reasons for this shift: firstly, the ingredients in those commercially produced syrups are often a mystery, packed with artificial flavors and colors. Secondly, they are overwhelmingly sweet for my palate. These days, I find a little sweetness goes a long way, and I prefer to control what goes into my body. While I’ve experimented with various dairy-free pumpkin spice latte recipes, this Creamy Cashew Pumpkin Spice Latte truly takes the crown. It’s not just incredibly delicious, but also wonderfully satisfying and surprisingly filling.

Why This Cashew Pumpkin Spice Latte Is a Fall Must-Have

This isn’t just another pumpkin spice latte recipe; it’s an elevated experience designed for the health-conscious connoisseur. Here’s why you’ll want to make this your go-to fall beverage:

  • Unparalleled Creaminess: Thanks to the magical properties of cashews, this latte achieves a velvety smooth texture that rival any dairy-based alternative, without any gums or thickeners.
  • Nutrient-Rich: Packed with the goodness of organic pumpkin, healthy fats from cashews, and optional collagen, it’s a beverage that nourishes from the inside out.
  • Customizable Sweetness: You have complete control over the sugar content, allowing you to tailor it to your preference or omit sweeteners entirely for a Whole30, vegan, or keto-friendly option.
  • Whole30 & Vegan Friendly: Crafted with wholesome, plant-based ingredients, this latte fits perfectly into Whole30, vegan, and even keto lifestyles, offering a guilt-free indulgence.
  • Warm & Comforting: It embodies all the cozy warmth and aromatic spices of autumn in a mug, making it the ideal companion for chilly mornings or a relaxing afternoon treat.

The Magic of Cashews in Your Coffee: Unlocking Ultimate Creaminess

You might be wondering, “Why cashews?” The answer lies in their incredible versatility and unique creamy texture once blended. Cashews are arguably one of the most beloved nuts, not just for snacking, but for their ability to transform into luscious creams, sauces, and, in this case, an incredibly smooth coffee creamer. They’ve become my personal favorite nut, with pecans as a close second, precisely because of their extensive culinary applications.

Earlier this year, I discovered the game-changing secret of blending cashews directly into my coffee. The result was nothing short of extraordinary – the creamiest coffee you could ever imagine. This simple trick completely eliminated the need for store-bought dairy-free milks, which often contain various gums, thickeners, and additives that many prefer to avoid (unless, of course, you’re crafting your own homemade versions). So, it was only natural to extend this genius hack to my beloved pumpkin spice latte, and the outcome was absolutely phenomenal!

For this recipe, it’s absolutely crucial to use **raw, unsalted cashews**. This ensures a neutral base flavor that won’t interfere with the delicate balance of pumpkin and spice. You can often find them at great prices at stores like Trader Joe’s, or conveniently order them online from retailers like Amazon. Soaking the cashews beforehand can also enhance their creaminess and make them easier to blend, though with a high-powered blender, it’s often not strictly necessary.

Essential Ingredients for a Perfect and Healthy Latte

Beyond the star ingredient – cashews – the quality of your other components truly elevates this latte from good to extraordinary. Here’s a closer look at what you’ll need and why your choices matter:

  • Freshly Brewed Strong Coffee: The foundation of any great latte is its coffee. Opt for a high-quality, freshly brewed strong coffee that stands up to the rich flavors of pumpkin and spice.
  • Organic Pumpkin Puree: Choose 100% pure pumpkin puree, not pumpkin pie filling, which often contains added sugars and spices. Using organic ensures you’re avoiding unwanted pesticides and additives. I personally favor this brand of organic pumpkin puree for its consistent quality and flavor.
  • Pumpkin Pie Spice: This spice blend is the heart of the “pumpkin spice” experience. The quality of your spices makes a significant difference. I exclusively use Pumpkin Pie Spice from Primal Palate because it’s organic, potent, and delivers an authentic, warm flavor profile without any questionable additives.
  • Collagen Peptides (Optional, but Recommended): For an added boost of nutrition, I love incorporating Vital Proteins Collagen Peptides. While entirely optional, collagen is fantastic for supporting gut health, strengthening hair, skin, and nails, and providing a good source of protein. It blends seamlessly into the latte without altering the taste or texture.
  • Maple Syrup (Optional Sweetener): If you prefer a touch of sweetness, a tablespoon of maple syrup works beautifully. Adjust the amount to your liking. However, if you are following a Whole30 protocol, remember to omit the maple syrup entirely. The natural sweetness of the pumpkin and spices often proves to be enough for many.
  • Coconut Cream (for Topping – Optional): For an extra decadent finish, a dollop of coconut cream or coconut whipped cream adds a lovely richness. This is the thick, hardened white part found at the top of a chilled can of full-fat coconut milk.
  • Cinnamon Stick (for Garnish – Optional): A cinnamon stick not only looks festive but also adds a subtle, fragrant aroma to your latte experience.

Beyond Homemade: Quick & Healthy Alternatives

While making this homemade cashew pumpkin spice latte is a rewarding experience, I understand that sometimes you need a quicker fix for that pumpkin spice craving. If you’re looking to infuse a little pumpkin spice goodness into your daily coffee without the blending, keep an eye out for high-quality, clean label pumpkin spice creamers. Prep Time: 5 mins
Total Time: 5 mins
Yield: 1 latte
A delicious blend of coffee, cashews, pumpkin puree, spices, and collagen make the perfect fall Whole30 beverage! This is also vegan and keto friendly.

Equipment

  • High-Powered Blender

Ingredients

  • 1.5 cups freshly brewed strong coffee
  • ¼ cup raw unsalted cashews
  • ¼ cup organic pumpkin puree
  • 1 tbsp collagen peptides, optional
  • ½ tsp pumpkin pie spice
  • 2 tbsp coconut cream or coconut whipped cream, for topping – optional (this is the hardened white part at the top of a can of full fat coconut milk)
  • cinnamon stick, for garnish (optional)
  • 1 tbsp maple syrup, more or less depending on how sweet you like it – omit for Whole30

Instructions

  1. Add freshly brewed coffee, raw cashews, organic pumpkin puree, pumpkin pie spice, collagen peptides (if using), and maple syrup (if using – omit for Whole30) to a high-powered blender (such as a Vitamix).
  2. Blend on high for at least one minute, or until the mixture is exceptionally creamy and smooth. Ensure there are no cashew bits remaining.
  3. Pour the blended latte into your favorite mug. Optionally, top with a dollop of coconut cream or coconut whipped cream, a sprinkle of additional pumpkin pie spice, and a cinnamon stick for garnish. Enjoy your perfectly healthy and creamy fall beverage!

Notes

*If you choose to use only 1 cup of coffee instead of 1.5 cups, remember to reduce the cashews to 2.5 tablespoons to maintain the ideal consistency; otherwise, the latte may become too thick.
