Understanding the Paleo and Grain-Free Approach

The paleo diet focuses on foods that our hunter-gatherer ancestors might have eaten, emphasizing lean meats, fish, fruits, vegetables, nuts, and seeds, while excluding grains, legumes, and dairy. This recipe embraces these principles by utilizing grain-free tortillas and a dairy-free approach to create a dish that’s both compliant and supremely satisfying. Siete Foods almond flour tortillas are a cornerstone of this recipe, providing a sturdy yet pliable wrapper that holds up beautifully to the rich filling and sauce, all while being grain and gluten-free. Their subtle nutty flavor also complements the robust beef and spicy sauce.

Crafting the Perfect Homemade Enchilada Sauce

The heart of any good enchilada lies in its sauce, and this homemade version is incredibly simple yet packed with complex flavors. It’s made from a base of tomato sauce, chicken broth, and a carefully selected blend of spices that are characteristic of traditional Mexican cuisine. The chili powder provides a warm, earthy depth, while garlic powder, onion powder, cumin, and oregano build layers of savory notes. A touch of cayenne pepper adds a gentle kick, and Coconut Aminos introduce a subtle umami depth without relying on soy. Preparing this sauce from scratch allows you to control the ingredients, ensuring it’s free from undesirable additives often found in store-bought varieties, and it’s surprisingly quick to whip up while the meat is browning.

Paleo Beef Enchiladas

A paleo version of the Mexican favorite!

Ingredients

Enchiladas

  • 1 tbsp olive oil
  • ½ onion, diced
  • 1 lb ground beef
  • 4.5 oz can diced green chilies
  • ½ tsp sea salt
  • 6-8 Siete grain-free tortillas ((1 pack has 8 tortillas)

Enchilada Sauce

  • 18 oz tomato sauce (I used 1.5 12 oz cans from Trader Joes)
  • ½ cup chicken broth
  • 3 tbsp chili powder
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp sea salt
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp Coconut Aminos
  • ¼ tsp cayenne pepper

Instructions

  • Preheat oven to 400°F (200°C).
  • Combine all sauce ingredients in a small saucepan and bring to a boil over medium heat. Reduce heat to low and let it simmer gently while you prepare the enchiladas.
  • Heat olive oil over medium heat in a large sauté pan. Add the diced onions, green chilies, and ground beef. Sauté until the beef is browned and cooked through, breaking it up with a spoon as it cooks. Drain any excess fat. Add ¼ cup of the simmering enchilada sauce plus the ½ tsp of sea salt to the beef mixture and stir well to combine.
  • Spoon about ½ cup of the enchilada sauce into the bottom of a 9×13 inch baking dish, spreading it evenly.
  • For the tortillas, gently warm each one individually to make them pliable and prevent cracking. You can do this by heating each tortilla for 10-15 seconds on a hot griddle or pan, or by microwaving them for 10-15 seconds on a plate. Once heated, fill each tortilla with a generous scoop of the meat mixture (approximately ¼ cup), fold the sides over, and then roll it up. Place the rolled enchilada, seam-side down, on top of the sauce in the baking dish. Repeat this process until all tortillas are filled and neatly arranged in the dish. Pour the remaining enchilada sauce evenly over the top of the rolled enchiladas.
  • Bake for 20 minutes, or until the sauce is bubbling and the enchiladas are heated through.
  • Garnish generously with a dollop of Dairy-Free Sour Cream (see notes for recipe link), freshly chopped cilantro, and sliced avocado. Serve immediately and enjoy!

Notes

Here is the Dairy-free sour cream recipe! For a spicier kick, increase the amount of cayenne pepper or add a pinch of red pepper flakes to the sauce.

Tips for Enchilada Success

  • Don’t Skip Warming the Tortillas: This is crucial for preventing them from tearing when you roll them. A quick pass on a hot griddle or a few seconds in the microwave makes them pliable and easy to work with.
  • Evenly Coat: Ensure each enchilada is well-coated with sauce both inside and out for maximum flavor and moisture.
  • Customize Your Filling: While ground beef is classic, feel free to experiment with ground turkey, chicken, or even a medley of sautéed vegetables for a vegetarian option. Just adjust cooking times accordingly.
  • Make Ahead: You can assemble the enchiladas up to a day in advance and store them covered in the refrigerator. When ready to bake, just add a few extra minutes to the cooking time.
  • Topping Perfection: The dairy-free sour cream, fresh cilantro, and creamy avocado aren’t just garnishes; they add essential layers of flavor and texture that complete the enchilada experience. Don’t skip them!

Serving Suggestions for a Complete Meal

These Paleo Beef Enchiladas are hearty enough to be a standalone meal, but they also pair wonderfully with a few simple sides to create a well-rounded feast:

  • Fresh Salad: A crisp green salad with a light vinaigrette offers a refreshing contrast.
  • Cauliflower Rice: For a grain-free alternative to traditional rice, cauliflower rice is an excellent choice.
  • Sautéed Vegetables: A side of quickly sautéed bell peppers and onions can add more color and nutrients.
  • Guacamole: Extra guacamole or sliced avocado is always a welcome addition for an added creamy texture and healthy fats.

Frequently Asked Questions (FAQs)

Here are some common questions you might have about making these delightful enchiladas:

Q: Can I use different meat?
A: Absolutely! Ground turkey or ground chicken would work beautifully as substitutes for ground beef. Ensure they are cooked through before mixing with the sauce.

Q: Can I make this vegetarian?
A: Yes! You can replace the ground beef with sautéed mushrooms, black beans (if you consume legumes), roasted sweet potatoes, or a mixture of plant-based crumbles for a delicious vegetarian version. You might also consider using vegetable broth instead of chicken broth for the sauce.

Q: How do I store leftovers?
A: Store any leftover enchiladas in an airtight container in the refrigerator for up to 3-4 days. They reheat well in the microwave or oven.

Q: Can I freeze these enchiladas?
A: Yes, these enchiladas freeze well! To freeze, assemble them in a freezer-safe baking dish but do not bake. Cover tightly with plastic wrap and then foil. Freeze for up to 2-3 months. To cook from frozen, remove the foil and plastic, cover loosely with foil, and bake at 375°F (190°C) for about 45-60 minutes, or until heated through and bubbling. You might want to add fresh sauce before baking if it looks dry.

Q: What if I can’t find Siete tortillas?
A: If Siete almond flour tortillas are unavailable, look for other grain-free or paleo-friendly tortillas made from cassava, coconut, or sweet potato flour. The key is to choose a brand that is pliable and doesn’t crack easily when rolled.
