They combine the creamy richness of cheesecake with the warm, comforting spices of pumpkin pie, all wrapped up in a convenient bar format that’s perfect for any fall gathering.

Our journey to creating this recipe stems from a desire to enjoy classic desserts while adhering to specific dietary requirements. After being diagnosed with Celiac disease, I embraced a dairy-free lifestyle to support gut healing. Over time, I discovered the wonderful world of lactose-free dairy products, and partnering with brands like Green Valley Creamery has been a game-changer. Their organic lactose-free dairy products have allowed me to reintroduce some beloved creamy textures into my diet, opening up a world of possibilities for recipes like this one.

This month, the star ingredient is Green Valley Creamery’s lactose-free cream cheese. Instead of a conventional application, I wanted to showcase its versatility in a dish that truly embodies the spirit of autumn desserts. The result is a lusciously smooth and rich cheesecake filling that proves you don’t need traditional dairy to achieve pure indulgence. If you’re wondering where to find Green Valley Creamery products, be sure to check their store locator – it’s worth the hunt!

Crafting the Perfect Pecan Crust: A Grain-Free Marvel

The foundation of any great bar dessert is a fantastic crust, and for these pumpkin cheesecake bars, we’ve opted for a grain-free pecan crust that is both flavorful and structurally sound. This crust draws inspiration from my popular paleo/vegan strawberry cheesecake bars recipe, but with a baked twist that works beautifully here. The pecans provide a rich, buttery flavor and a satisfying texture that complements the creamy filling. They are naturally gluten-free and add a wonderful depth to the overall profile of the bars.

To ensure the best flavor and quality, I recommend using raw, unsalted pecans. I often source mine from places like Trader Joe’s, but any high-quality raw pecans will do the trick. The combination of pecans, dates for natural sweetness and binding, solid coconut oil, almond flour, and a hint of sea salt and pumpkin pie spice creates a crust that is robust, subtly sweet, and wonderfully aromatic. This crust isn’t just a base; it’s an integral part of the dessert’s character, offering a delightful contrast to the smooth cheesecake layers.

Preparing the crust is straightforward. All the ingredients are pulsed together in a food processor until a sticky, granola-like consistency is achieved. This mixture is then pressed firmly into your baking pan, forming an even layer. A quick chill in the freezer helps it set beautifully before the filling is added, ensuring a clean and stable base for your cheesecake layers. This simple step is crucial for achieving the perfect texture and preventing the crust from becoming too crumbly after baking.

The Creamy Heart: Lactose-Free Cheesecake Filling

The star of these bars is undoubtedly the velvety smooth cheesecake filling. What makes this recipe truly special for many is its lactose-free nature, thanks to the use of high-quality lactose-free cream cheese. While you can certainly use regular cream cheese if lactose isn’t a concern for you, the lactose-free option ensures everyone can enjoy this decadent treat. Green Valley Creamery’s organic lactose-free cream cheese performs just like its traditional counterpart, delivering that classic tangy, rich flavor and creamy texture essential for a perfect cheesecake.

The filling is divided into two distinct layers: a plain cream cheese layer and a pumpkin-infused cream cheese layer. This thoughtful layering creates a beautiful visual contrast, mimicking the traditional two-tone appearance of pumpkin cheesecakes. To achieve this separation, there’s a key step: letting the white cream cheese layer freeze for at least 1-2 hours before gently pouring the pumpkin layer on top. This chilling period allows the first layer to firm up sufficiently, preventing the pumpkin mixture from swirling into it and maintaining those crisp lines. Of course, if a pumpkin swirl effect is what you desire, feel free to skip the extended freezer time!

Beyond the cream cheese, the filling is sweetened with sugar (with an option for coconut sugar if you prefer, though be mindful it will slightly alter the color), and enriched with vanilla extract and eggs. These ingredients come together to create a harmonious balance of sweetness and tang, with a texture that is wonderfully smooth and melts in your mouth. The pumpkin puree then adds that quintessential fall flavor and a beautiful orange hue, making each bite a pure autumn delight.

The Crowning Glory: Pumpkin Spice Streusel Topping

No fall dessert is complete without a little extra textural excitement, and our pumpkin spice streusel topping delivers just that. This crumble topping adds a delightful crunch and an extra burst of warm, inviting spices, elevating these cheesecake bars from delicious to absolutely unforgettable. The streusel is made with almond flour, coconut sugar, ghee or coconut oil, and a generous amount of pumpkin pie spice. It’s a simple addition that makes a huge impact on the final flavor and texture profile.

The streusel is prepared while the cheesecake bars are in their initial baking phase. Combining the ingredients in a bowl creates a crumbly mixture that is then sprinkled generously over the partially baked cheesecake. As it bakes further, the streusel becomes golden and crisp, adding a comforting aroma to your kitchen and an irresistible topping to your bars. This layer not only provides texture but also reinforces the seasonal pumpkin spice theme, making every bite a multi-sensory experience.

Tips for Success and Storage

To ensure your Pumpkin Cheesecake Bars turn out perfectly every time, here are a few expert tips:

  • Ingredient Temperature: Ensure your lactose-free cream cheese and eggs are at room temperature. This helps them mix smoothly and prevents lumps in your filling, resulting in a perfectly creamy texture.
  • Parchment Paper: Lining your 9×12 baking pan with parchment paper, allowing an overhang on the sides, will make lifting the cooled bars out of the pan incredibly easy for clean slicing.
  • Freezing the Layers: Don’t skip the freezer step for the white cream cheese layer if you want distinct white and orange layers. This is crucial for structural integrity and visual appeal.
  • Cooling is Key: After baking, it’s vital to let the bars cool completely at room temperature before transferring them to the refrigerator. Cheesecake is delicate and needs slow cooling to set properly and prevent cracking.
  • Overnight Chill: For the best texture and flavor, these bars truly benefit from an overnight chill in the fridge. This allows all the flavors to meld beautifully and the cheesecake to set into that firm, yet creamy, consistency we all love. Plan ahead and make them the night before your event or gathering.
  • Slicing: For clean slices, use a sharp knife and wipe it clean with a warm, damp cloth between each cut.
  • Storage: Store any leftover pumpkin cheesecake bars in an airtight container in the refrigerator for up to 5-7 days. They can also be frozen for longer storage; wrap individual bars tightly in plastic wrap and then aluminum foil, and store in a freezer-safe bag for up to 1-2 months. Thaw in the refrigerator before serving.

Why Choose Grain-Free and Lactose-Free?

Opting for grain-free and lactose-free desserts offers a host of benefits, particularly for those with specific dietary sensitivities or health goals. For individuals with Celiac disease or gluten sensitivity, going grain-free eliminates potential triggers and supports digestive health. Grain-free recipes often rely on nutrient-dense alternatives like almond flour and nuts, which contribute healthy fats, protein, and fiber.

Similarly, lactose-free options are a blessing for anyone with lactose intolerance, allowing them to enjoy creamy, dairy-rich treats without the discomfort associated with lactose digestion. Products like Green Valley Creamery’s lactose-free cream cheese are made with real dairy but have the lactose enzymatically broken down, making them easy to digest while retaining all the flavor and texture of traditional dairy. This means you can indulge in a rich, satisfying cheesecake without any post-dessert woes.

Beyond specific intolerances, many people choose these options for general wellness, seeking to reduce inflammation, balance blood sugar, or simply incorporate more wholesome ingredients into their diet. These Pumpkin Cheesecake Bars perfectly align with these goals, proving that healthy and delicious can indeed go hand-in-hand. They’re a testament to how creative adaptations can lead to incredibly satisfying results for everyone at the table.

Serving Suggestions for Any Occasion

These Grain-Free and Lactose-Free Pumpkin Cheesecake Bars are incredibly versatile and suitable for a wide range of occasions. They make a stunning addition to your Thanksgiving dessert spread, a festive treat for Halloween parties, or a cozy indulgence for a quiet autumn evening at home. Serve them chilled, perhaps with a sprinkle of extra cinnamon or a dollop of lactose-free whipped cream for an extra touch of elegance.

Their convenient bar format makes them easy to transport and serve, perfect for potlucks, family gatherings, or holiday office parties. They are hearty enough to satisfy a sweet craving but light enough not to overwhelm after a big meal. Prepare to impress your guests with a dessert that is not only incredibly delicious but also thoughtfully crafted to accommodate various dietary preferences.

Yield: 20 bars

These pumpkin cheesecake bars are grain-free, gluten-free, and lactose-free! The perfect dessert for your next fall gathering.

Ingredients

Pecan Crust

  • 2 cups raw unsalted pecans
  • 7 pitted dates
  • ¼ cup coconut oil, in solid form
  • ⅓ cup almond flour
  • ¼ tsp sea salt
  • 1 tsp pumpkin pie spice

Cheesecake filling

  • 24 oz lactose-free cream cheese (3 – 8oz tubs)
  • 1 cup sugar (can sub coconut sugar – note it will change the color)
  • 1 tsp vanilla extract
  • 3 eggs
  • 1 ¼ cup pumpkin puree

Pumpkin Spice Streusel Topping

  • ¾ cup almond flour
  • ½ cup coconut sugar
  • ⅓ cup ghee or coconut oil
  • 1 tbsp pumpkin pie spice

Instructions

  1. Preheat oven to 325°F (160°C). Lightly spray a 9×12 baking pan with coconut oil or cooking spray, or line with parchment paper. To make the crust, combine all crust ingredients in a food processor and pulse for 1 minute or until a sticky granola consistency is reached. Use your hands to press the mixture down into the pan so it covers the bottom evenly. Place the pan in the freezer while you prepare the filling.

  2. For the filling, combine the cream cheese, sugar, vanilla, and eggs in a bowl and mix well until a creamy consistency is reached. (Do not add pumpkin yet!) Remove the pan from the freezer and add half of the cream cheese mixture. Use a spatula to spread an even layer on top of the pecan crust. Return the pan to the freezer.

  3. Add the pumpkin puree to the remaining cream cheese mixture and mix well until combined.

  4. Once the white cream cheese layer has set in the freezer for 1-2 hours, add the pumpkin cream cheese layer evenly on top. Bake for 30 minutes.

  5. Meanwhile, prepare the streusel topping. Combine all streusel ingredients in a bowl and mix until combined. Take the cheesecake out of the oven and use your hands to sprinkle the streusel mixture all over the top. Bake for an additional 30 minutes. Remove from the oven and let it cool completely. Refrigerate overnight, then slice, serve, and enjoy!

Notes

If you’re not concerned about having distinct white and orange layers, you can skip the freezer step for the white layer and simply add the pumpkin puree to the entire cream cheese mixture upfront.
