This is a delicious salad with various components like seared ahi tuna, eggs, tomatoes, potatoes, capers, olives, and a homemade vinaigrette.

Ingredients

  • 1 tbsp avocado or olive oil
  • 1 8 oz ahi tuna steak
  • 1 large tomato, sliced
  • 4 eggs
  • ½ lb baby red potatoes
  • 2 cups green beans
  • 4 cups mixed greens
  • ¼ cup black olives
  • 1 tbsp capers
  • salt and pepper, to taste

Champagne Vinaigrette

  • ½ cup olive oil
  • ¼ cup champagne vinegar
  • 2 cloves minced garlic
  • 1.5 tbsp dijon mustard
  • 2 tsp fresh oregano, chopped fine
  • 2 tsp fresh parsley, chopped fine
  • ½ tsp sea salt
  • 2 tsp coconut aminos, or honey if not Whole30

Instructions

  1. Combine all the vinaigrette ingredients in a bowl and whisk well until emulsified. Store in the refrigerator until ready to use. This can be made up to 3 days in advance.
  2. To cook the potatoes and hard-boiled eggs simultaneously, especially using an Instant Pot, follow these simple steps: Add 1.5 cups of water to the bottom of the Instant Pot. Place a trivet inside, then carefully arrange the eggs and mini red potatoes on top of the trivet. Secure the lid and cook on manual high pressure for 5 minutes. Once cooking is complete, perform a quick manual release of the steam. Immediately transfer the cooked eggs to an ice bath to halt the cooking process and prevent overcooking; this also makes them easier to peel. Peel and slice the eggs. Allow the potatoes to cool slightly, then slice them in half (or into quarters if larger) and toss them gently with about ¼ of the prepared Champagne Vinaigrette.
  3. Prepare the green beans: Steam them in a pot with about 1 inch of water for approximately 5 minutes, or until they are tender-crisp and bright green. Drain any excess water and set aside to cool. Slice your tomatoes to your desired thickness.
  4. To cook the Ahi Tuna, season both sides of the tuna steak generously with salt and freshly ground black pepper. Heat a large cast iron skillet or a heavy-bottomed pan over medium-high heat until it is VERY hot. Add a small amount of avocado oil or olive oil to the pan. Once the oil is shimmering, carefully place the seasoned tuna steak in the hot pan. Cook for exactly 1 minute per side for a rare interior. If you prefer a medium doneness, cook for 2 minutes per side. For a slightly different flavor profile, you can also grill the tuna for the same amount of cooking times. Once cooked, remove the tuna from the pan and let it rest for a minute before slicing it thinly against the grain.
  5. Assemble your magnificent salads: Arrange a generous bed of mixed greens in your bowls. Artfully arrange the sliced hard-boiled eggs, steamed green beans, sliced tomatoes, black olives, capers, vinaigrette-tossed potatoes, and thin slices of seared Ahi Tuna on top of the greens.
