Asian Pork Meatball Bowls (Whole30, Paleo)

Ingredients

Asian Pork Meatballs

  • 1 lb ground pork , I like Butcher Box
  • 1 egg
  • ¼ cup almond flour
  • 1 tbsp coconut aminos
  • 1 tsp ground ginger
  • 1 tsp garlic powder
  • ½ tsp sea salt
  • ½ tsp crushed red pepper

Fried “Rice”

  • 2 tbsp sesame oil
  • ½ onion, diced
  • 2 cloves garlic, minced
  • 1 12 oz bag frozen cauliflower rice, pound on it so there are no large chunks!
  • 1 bag coleslaw mix , (green cabbage, purple cabbage, carrots)
  • ¼ cup coconut aminos
  • ½ tsp sea salt, more or less to taste

Sticky Sauce

  • ¾ cup coconut aminos
  • 1 tbsp rice vinegar
  • 2 tsp toasted sesame oil
  • ½ tsp Red Boat Fish Sauce
  • ½ tsp ground ginger
  • 1 tbsp honey, omit for Whole30
  • 2 tsp arrowroot powder
  • 2 tbsp water

Garnish

  • diced green onion
  • sesame seeds

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper. In a large bowl, combine all of the meatball ingredients (ground pork, egg, almond flour, 1 tbsp coconut aminos, 1 tsp ground ginger, 1 tsp garlic powder, ½ tsp sea salt, ½ tsp crushed red pepper) and mix well using your hands until just combined. Form the mixture into approximately 2-inch meatballs; you should get about 12 meatballs per pound of pork. Place the meatballs evenly on the prepared baking sheet and bake for 20 minutes until browned and cooked through.
  2. While the meatballs are baking, prepare your fried “rice.” Heat a large skillet or wok over medium-high heat and add 2 tbsp sesame oil. Add the diced onion and minced garlic, and sauté for 2-3 minutes until fragrant and softened. Stir in the frozen cauliflower rice (ensuring no large chunks), the coleslaw mix, ¼ cup coconut aminos, and ½ tsp sea salt. Stir well to combine all ingredients. Cover the skillet and let it cook, stirring occasionally, for 5-7 minutes, or until the cauliflower rice is tender and the vegetables are slightly softened.
  3. Concurrently with the “fried rice,” prepare the sticky sauce. In a small saucepan, combine ¾ cup coconut aminos, 1 tbsp rice vinegar, 2 tsp toasted sesame oil, ½ tsp Red Boat Fish Sauce, ½ tsp ground ginger, and 1 tbsp honey (omit honey for Whole30). In a separate small bowl, whisk together 2 tsp arrowroot powder and 2 tbsp water to create a slurry. Bring the sauce ingredients in the saucepan to a gentle boil, then slowly whisk in the arrowroot slurry mixture. Continue whisking constantly for approximately 1 minute until the sauce thickens to a glossy, sticky consistency. Remove from heat and set aside.
  4. Once the meatballs are cooked, remove them from the oven.
