Craving a delicious, lightning-fast meal that’s also incredibly healthy? This Beef and Broccoli Ramen Stir Fry is your answer! In just 15 minutes, you can whip up a flavorful dish featuring succulent ground beef, crisp-tender broccoli, and wholesome rice ramen, all coated in an irresistible stir fry sauce. Say goodbye to greasy takeout and hello to a meal that’s entirely gluten-free, dairy-free, soy-free, and MSG-free, without compromising on taste.

For many of us, instant ramen noodles were a staple during college days or early adulthood. They were the ultimate quick fix, a cheap and convenient meal that required minimal effort. Back then, nutritional labels were often an afterthought, and the focus was purely on satisfying a craving. However, as our understanding of food and its impact on our health evolves, so does our approach to cooking and eating.
A closer look at a standard pack of conventional ramen noodles reveals a stark reality: an astonishingly high sodium content—often exceeding 1,700 mg per serving! That’s nearly the entire recommended daily intake in one small package. Beyond the sodium, the ingredient list typically includes processed components like wheat, soy sauce powder (derived from wheat and soybeans), MSG, artificial flavors, and caramel color. These ingredients can trigger sensitivities, contribute to inflammation, and undermine overall well-being for many individuals.
This realization can be a wake-up call for those seeking a cleaner, healthier diet. Fortunately, the culinary world has evolved, offering fantastic alternatives that allow us to enjoy the comforting essence of beloved dishes without the unwanted additives. This is where the discovery of Lotus Foods Rice Ramen became a true game-changer for me. Unlike traditional ramen, these noodles are crafted from just two simple, wholesome ingredients: brown rice and millet. That’s it! No gluten, no soy, no hidden nasties. They’re widely available in many health food stores, online retailers like Thrive Market, and even in bulk at places like Costco.
Embracing these healthier alternatives means we no longer have to sacrifice flavor or convenience for the sake of our health. This Beef and Broccoli Ramen Stir Fry recipe perfectly exemplifies how easy it is to recreate a takeout favorite at home, making it suitable for a variety of dietary needs, including those following gluten-free, dairy-free, soy-free, or even Whole30 lifestyles.

Essential Ingredients for Your Beef and Broccoli Ramen Stir Fry
One of the best aspects of this recipe is its simplicity. You’ll only need a handful of accessible ingredients, many of which might already be in your pantry or fridge. Each component plays a crucial role in building the robust and authentic flavors of this stir fry, while keeping it wholesome and free from common allergens.
- Ground Beef: A fantastic, versatile protein that cooks quickly, making it ideal for a 15-minute meal. It browns beautifully and absorbs the stir fry sauce perfectly. Feel free to use lean ground beef for a lighter option or a higher fat percentage for more flavor.
- Broccoli: You’ll need about 2 cups of chopped florets. Broccoli adds essential vitamins, fiber, and a satisfying crunch. It steams gently in the pan, ensuring it’s crisp-tender—the ideal texture for a stir fry.
- Rice Ramen: The star of our noodle base! I highly recommend Lotus Foods Rice Ramen for its clean ingredient list (brown rice and millet) and excellent texture. You can often find it on Thrive Market or by using the store locator on the Lotus Foods website. Many Costco locations also carry a 12-pack, offering great value. If your ramen comes with seasoning packets, remember to omit them for this recipe, as we’ll be making our own delicious, healthy sauce.
- Coconut Aminos: This is a key ingredient and an outstanding gluten-free, soy-free alternative to traditional soy sauce. It provides that essential umami depth with a slightly sweeter, milder flavor, and significantly less sodium than conventional soy sauce. It’s truly indispensable for those avoiding soy.
- Rice Vinegar: Adds a touch of bright acidity to the stir fry sauce, balancing the sweetness of the coconut aminos and enhancing the overall flavor profile.
- Garlic Powder: A foundational flavor in any good stir fry. While fresh garlic can be used, garlic powder offers convenience and disperses evenly throughout the sauce.
- Sesame Oil: Essential for its distinct nutty aroma and flavor, which is characteristic of Asian-inspired dishes. A little goes a long way in adding depth and authenticity.
- Ginger (fresh or powdered): Freshly grated ginger offers a vibrant, pungent kick, but powdered ginger works perfectly for convenience. It adds a warm, spicy note that complements the other flavors beautifully.
- Crushed Red Pepper: For those who enjoy a bit of heat, crushed red pepper flakes provide a gentle warmth and subtle spice. Adjust the quantity to your preference, or omit entirely for a milder dish.
- Arrowroot Starch: This is our secret weapon for achieving a perfectly thickened, glossy stir fry sauce that clings to the noodles and beef, rather than being watery. It’s a fantastic gluten-free alternative to cornstarch.
Whole30 and Paleo Friendly Modifications: For those following a Whole30 or Paleo lifestyle, this recipe is incredibly adaptable! Simply swap the rice ramen for vegetable noodles. Delicious options include spaghetti squash, zucchini noodles (zoodles), palmini noodles, or sweet potato noodles. These alternatives make it a fantastic, compliant meal without sacrificing flavor or satisfaction.

Step-by-Step Guide to Crafting Your Healthy Beef and Broccoli Ramen Stir Fry
This recipe is designed for maximum efficiency and flavor, proving that healthy eating doesn’t have to be complicated or time-consuming. Follow these straightforward steps to create a delightful meal in under 20 minutes.
- Prepare Your Sauce: Begin by whisking together all the sauce ingredients: coconut aminos, sesame oil, rice vinegar, garlic powder, ginger (powdered or fresh), crushed red pepper, and arrowroot starch. Whisk until the arrowroot starch is fully dissolved and the mixture is smooth. Set this aside; it will be ready to go when you need it.
- Cook Your Noodles: Bring a pot of water to a boil and cook your rice ramen noodles according to the package directions. Rice ramen typically cooks very quickly, often in just 3-5 minutes. Once al dente, drain them thoroughly and set them aside. If using veggie noodles for a Whole30 option, prepare them according to your preference (e.g., spiralize zucchini and quickly sauté, or roast spaghetti squash).
- Brown the Ground Beef: Heat a large sauté pan or wok over medium-high heat. Add a tablespoon of sesame oil (or your oil of choice) and then the ground beef. Season with a pinch of salt. Break up the beef with a spoon as it cooks. Sauté for 5-7 minutes, until it’s beautifully browned and cooked through. Using a slotted spoon, remove the cooked beef from the pan, leaving any excess fat behind, and transfer it to a plate. Set aside.
- Steam the Broccoli: Add the chopped broccoli florets to the same pan. Pour in about ½ cup of water. Cover the pan with a lid to steam the broccoli. Let it cook for 3-4 minutes, or until the broccoli is crisp-tender and vibrant green. You want it tender enough to eat easily but still with a slight bite.
- Combine and Finish: Uncover the pan. Add the cooked ground beef back into the pan with the broccoli. Then, gently add the drained rice ramen noodles. Pour your prepared stir fry sauce over everything. Toss all the ingredients together over low to medium heat for 1-2 minutes. The sauce will begin to thicken as it heats, coating the beef, broccoli, and noodles beautifully. Continue tossing until everything is heated through and well combined.
- Serve and Garnish: Dish out your delicious Beef and Broccoli Ramen Stir Fry. For an extra flourish and a touch of fresh flavor, garnish with additional crushed red pepper flakes (if desired) and a generous sprinkle of chopped green onions. Enjoy immediately!

This quick and easy method ensures that you get maximum flavor with minimal fuss, making it perfect for busy weeknights or whenever you’re craving something hearty, healthy, and satisfying. The combination of savory beef, fresh broccoli, and bouncy gluten-free noodles creates a symphony of textures and tastes that will transport you straight to your favorite Asian restaurant, all from the comfort of your kitchen.

Video
Ingredients
- 4 blocks Lotus Foods Rice Ramen, or 12 oz gluten-free capellini or thin noodle. OR 3 cups veggie noodles of your choice for a Whole30 option, cooked
- 1 tbsp sesame oil, or oil of choice
- 1 lb ground beef
- 2 cups chopped broccoli florets
- ½ cup water
- Salt, to taste
- chopped green onions (for garnish), if desired
Stir Fry Sauce
- ½ cup coconut aminos
- 2 tsp sesame oil
- 2 tsp rice vinegar
- 1 tsp garlic powder
- 1 tsp ground ginger, can substitute 2 tsp minced fresh ginger
- ½ tsp crushed red pepper flakes, omit for less spice
- 1 tsp arrowroot powder
Instructions
-
In a small bowl, whisk all of the stir fry sauce ingredients together until smooth. Set aside.
-
Cook the rice ramen noodles (or your chosen veggie noodles) according to package directions. Drain thoroughly and set aside.
-
While the noodles cook, heat 1 tbsp sesame oil in a large sauté pan or wok over medium-high heat. Add the ground beef along with a pinch of salt. Cook, breaking up the meat with a spoon, for 5-7 minutes until fully browned and cooked through. Remove the beef with a slotted spoon and transfer to a plate, leaving any residual oil in the pan.
-
Add the broccoli florets to the same pan, along with ½ cup of water. Cover the pan and let the broccoli steam for 3-4 minutes, or until crisp-tender.
-
Return the cooked ground beef to the pan. Add the drained ramen noodles. Pour the prepared stir fry sauce over all the ingredients. Toss everything together over medium heat for 1-2 minutes until thoroughly heated through and the sauce thickens and coats the ingredients.
-
Serve immediately, garnished with extra red pepper flakes and chopped green onions, if desired. Enjoy your delicious and healthy homemade stir fry!
Notes
To boost the protein content, feel free to double the amount of ground beef. If you do this, I highly recommend doubling the stir fry sauce as well to ensure all ingredients are well coated and flavorful.
It is crucial to use coconut aminos as specified in this recipe. Do not substitute with gluten-free soy sauce, as it is significantly saltier and will overpower the delicate balance of flavors in this dish.
